Apricot Ice Cream

Living Better Cafe know's how much you love your desserts. Especially, Ice Cream. Let's all scream for this delicious "ICE Cream" because it's Apricot ice cream.



Apricot Ice Cream

Move over Vanilla, Chocolate and Neapolitan ice cream, Living Better Cafe has a much great tasting Ice cream your going to enjoy.


Serves: 1 quart

2 c. milk
2 c. heavy cream
2 lbs. (whole) apricots
1 1/4 c. sugar
3 egg yolks
1 tsp. Almond extract

Direction:

1. Place apricot in boiling water for 20 seconds to loosen up their skins, then remove them from the water, drain and peel them.

2. Separate the apricots into halves and then discard the pits.

3. Chop the apricots coarsely and place them in a large mixing bowl.

4. sprinkle with 1/4 to 1/2 cup of sugar, stir and let stand for 1 hour, before pureeing.

5. In a small bowl, beat the egg yolks until they are a light yellowish color, For about 3 to 4 minutes and set aside.

6. Blend the whipping cream, milk and the remaining sugar in a heavy-bottom saucepan. Cook over medium heat, whisking often, until the sugar has dissolved and the mixture is hot.

7. spoon about 1 cup of the hot mixture into the beaten egg yolks, whisking constantly until well-blended and becomes smooth.

8. Then begin pouring the egg yolk mixture into the saucepan and continue to cook over medium heat, whisking constantly, until the mixture thickens enough to form a film or coating on the back of a spoon, for about 5 minutes.

9. Remove from the heat and add in extract.

10. Allow the mixture to cool at room temp, and stir in the pureed apricot.

11. After mixture has cooled at room temp, place in the mixture inside your ice cream maker, and follow the instruction according to your manufacturer instructions.

Before Living Better Cafe can get started, I Katrina Smith the creator of L.B.C and Coffee Talk would like to share a little story with you. This story of course has to revolve around my health and eating healthy. And your probability wondering why I am sharing my health with you. there's a reason and I will get to that in a minute. But, before I do there is a link that I will be sharing with you as well, that will tie together with my health. So, you will begin to see why I have chosen to share my story, plus this link with you. As you will see how important it is for your health also.

This story start's far back as I can remember. Like, when I was a little thing. You know a baby. I am not going to tell a full story, just enough so you can get where, I am coming from with this. And why I have to start from the very beginning because other wise you would be stuck and wondering where, am I going with this. So, with that being said here goes my story, and then you can read the link, Living Better Cafe has posted for you.

When I was nine months old, I was in an automobile accident. So, because of the accident, I suffered severe brain damage, to all parts of my brain, and it was cause by someone driving drunk. And because of that, I suffer from grand mal seizure's and other medical conditions. So, because of the auto accident, I started having seizures. So, along with everything else. I needed to change the way I eat. Well not to much.Now, what does that have to do with eating healthy? So, on occasions, I would eat food's that are in, the Ketogenic diet. Like, Avocado's, and so forth. That way it can help keep my brain healthy because I know how important it is for the body.

Apricot chocolate-chip Waffles

Today Living Better Cafe is sharing with you a recipe from, Coffee Talk's blog that will have your taste buds saying Yummy to my tummy goodness. Why, the creator of Living Better Cafe has an Apricot tree in her back yard, and she is crazy about her apricot's.

Serves: 8

1 lb. fresh Apricot
1 c. all-purpose flour * GF
1 c. Coconut flour
1 c. Greek yogurt
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. Himalayan salt
3 Tbsp. Pure granulated sugar
2 c. buttermilk
1 lg egg yolk
1 Tbsp. E.V.O.O
1/4 c. pecans
3 lg egg whites

Directions:

1. Preheat waffle iron. Dice Apricot. blend together wheat flour, all-purpose flour, baking soda, baking powder and 1 Tbsp. sugar; and set aside.

2. Using a wire or hand mixer, mix together the buttermilk, egg yolk, vanilla extract, and E.V.O.O. Stir in the dry ingredients until the mixture becomes moist. Next fold in the apricots and the pecans, and chocolate chips.

3. In a small mixing bowl, beat the egg whites until they begin to form soft peaks; add in 2 Tbsp. sugar and continue to beat the egg whites until the mixture firm peaks form and they look shiny.

4. Next add in 1/4 of the egg white mixture in to the waffle mixture. Then fold in the remaining egg white in to the waffle mixture.

5. pour 2/3 c. mixture for each onto the waffle iron, and allow to cook for about four minutes.

Vegan taco bowl

Vegan taco bowl

Serves: 4

Who loves tacos? Living Better Cafe knows you do, and you do not have to feel like eating tacos are just for meat eaters because they are not. Especially, this taco recipe will have you going back for more.

Build-a-bowl

4 Tortillas
non-stick cooking spray

Salad

1/4 cup and 2 tablespoons almonds, blanched and slivered
1/2 pound spinach, rinsed and torn into bite-size pieces
1/2 cup dried cranberries
1 tablespoon toasted sesame seeds
1-1/2 teaspoons poppy seeds
1 cup frozen corn kernels
5/8 avocado - peeled, pitted and diced
5/8 red bell pepper, chopped
1-1/4 tomatoes, chopped
4 green onions, thinly sliced
1/2 (16 ounce) package extra-firm tofu, drained and diced
1 cup snow peas, trimmed
2 small carrots, grated
1/3 cup chopped fresh cilantro (optional)

Build-a-bowl directions:

1. Preheat oven to 375.

2. Heat tortilla's until they become warm. Coat each side of the tortilla's with cooking spray. Turn a muffin tin upside down. Placing a tortilla in the space between 4 cups to form a bowl shape.Bake until the bowls become firm and start to brown, about 15 minutes. Transfer to a wire rack to cool.

Salad directions:
1. Toss all the vegetables together, and serve inside the tortilla bowl.

German Chocolate cookies

Living Better Cafe know's how much you love your desserts. Especially, this German Chocolate cookies. Why these cookies would make you feel like, your on cloud nine, and that's okay.

Once you taste these cookies, you will not want to buy anymore store brought cookies again. Why, Shhh! Santa Claus might hear this, that's if you celebrate Christmas in July: He will just have to just settle for those sugar cookies, and just plain chocolate chip cookies because these are your cookies.

Serves: 4 dozen

3 Tbsp. all-purpose flour
2 tsp. unsweetened cocoa powder
1/8 tsp. baking soda
1/8 pinch Himalayan salt
1 Tbsp. and 1 tsp. Margarine, softened
1 Tbsp. and 1 tsp. light brown sugar, packed
1 Tbsp. and 1 tsp. Pure white sugar
1/8 lg eggs, lightly beaten
1/8 tsp. vanilla extract
1 Tbsp. and 1 tsp. semisweet chocolate chunks
1 Tbsp. and 1 tsp. sweetened shredded coconut
1 Tbsp. and 1 tsp. pecans, chopped

Directions:

1. Preheat the oven to 375. Lining your baking sheet with a silicone baking mat, or aluminium foil.

2. In a medium-size mixing bowl, whisk together flour, cocoa powder, baking soda, and salt.

3. Next beat in the Margarine, brown sugar, white sugar, eggs, and vanilla extract together in a bowl with an electric mixer, or a wire hand mixer, until light and fluffy. Then begin adding the flour mixture in to the Margarine mixture, adding about 1/4 c. at a time, until dough is completely combined. Gently stir in chocolate chunks, coconut, and pecans into dough. Scoop dough in a 1-in balls onto a prepared baking sheets.

Apricot-Plum Smoothie

Serves: 1

This Smoothie has nothing on any restaurant. Especially, if you're looking for a smoothie that can pack a punch, and is filled with tons of vitamins that will give you an extra boost. You have chosen the right Smoothie.

1/2 c. Apricot, Chopped and pit removed
1/2 c. Plum,Chopped and pit removed
1/2 c. milk ( you can omit the dairy, if you are a vegan/ vegetarian)
1 1/2 tsp. Sugar

Direction:

Place the Plum, Apricot and Milk in the blender, and push the Smoothie button, until ingredients are completely blended together well.

Living Better Cafe has yet another Money Saving Tip for you, and you would not believe this tip that coming to you. If you love food then, you would get where Living Better Cafe is going. How many of you have cookbook's lying around in your kitchen? Why Living Better Cafe bets you all have cook books. But, you just do not have any space to put them, They are either in your pantry where your food goes, or in your cabinet yet where your food goes. So, Living Better Cafe has a great tip for you. And you sure do not want to miss it either. So, this tip should solve your problem.

Under the cabinet bookshelf/spice rack


1. Supply: Why before you can even begin, you will definitely need some supplies. What are these supply you are going to need: Brackets, Anchors, Screws, level, drill Measuring tap and wooden board, and a pencil.

2. Measure: This is definitely the most important step of all, measuring the space between the bottom of the cabinet and your counter before starting.

3. More measuring: you are not seeing double. Yes there is more measuring involved here. Why you are going to need to measure the wooden board, you will be using to place your books on. So, do not put away the tape measure yet because you're not done with it yet.

4. Assembling: Are you ready to start drilling away? Why of course your ready because you would not have that drill in your hand. Therefore, you will need to start anchoring the anchors to the wall with screws. You have already set your marks with your pencil. So, that it will become easy to follow. Now start drilling with the screw attached to the drill bit, to the wall where you have marked with the pencil.

5. Stability: Bracket in? Check. Now you have your brackets in place, now you can place your wooden board up, that will hold your book. After that you will need to pull out your level to check to see, if everything is correctly leveled.

6. Buckle down: you have already done your x 2 measuring, and you have assembled everything plus check to see, if everything has been leveled correctly. So, now it's to fasten the board down to the self. And what do you know BAM ! You have your book's right at eye level and when you need them.

Step 7 (optional)

7. Cover: you can add a ply glass door to keep your books from getting damage, from the moisture that in your kitchen. Why even dust also, as thing's can collect dust pretty fast.

Banana Praline Pancakes

Banana Praline Pancakes

Living Better Cafe says: Why not treat your dad, to breakfast in bed because today is a special day for him. So, show him how much you truly care about him, by treating him to a breakfast in bed. Go ahead dad's you all have earned this. So what better way to treat your "Pop's"? with this recipe of course.

Serves: 5

2 eggs
2 c. all-purpose flour, sifted
3 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 1/2 c. buttermilk
4 Tbsp. (1/2 stick) unsalted Margarine, melted
1/2 tsp. vanilla extract
1 to 2 Tbsp. E.V.O.O
1 3/4 Banana, mashed
1 cup chopped pralines, plus more for serving
Whipped cream for serving
Pancake syrup for serving

Directions:

1. In a large mixing bowl, whisk in the eggs until bubbles begin to form. Add in the flour, sugar, baking powder, baking soda, salt, buttermilk, margarine, Banana and vanilla extract and stir just until smooth; do not over beat the mixture.

2. Heat a dutch oven skillet, or fry pan over medium heat. delicately coat the pan with E.V.O.O. Pour in 1/2 batter, Topping with 1 Tbsp. Chopped Pralines. Allow to cook until bubbles begin to form at the top about two minutes, and flip over and allow two minutes more.

3. Serve with your dad's favorite syrup and top it off with Whipped cream.

Serves: 1

1/8 c. carrot, Julienne
1/8 c. head of cabbage, shredded
1/8 c. broccoli stem, Julienne *( save the head of the broccoli because they can become apart of a different meal.)
1/8 c. zucchini, Julienne
1 Tbsp. & 1 tsp. Cole slaw dressing
2 pieces of bread

Direction:

1. In a small mixing bowl blend together all the ingredients, except the bread.

2. once all the ingredients have been mixed together, its time to add mixture on one slice of bread, covering the slice of bread completely.

As Summer is just around the corner, and everyone geared up for different events that, will be happening during the summer. I Katrina would like to say a couple of things. 1. remember to stay cool during the hottest part of the day, and 2. drink plenty of water and no sugary beverage because that's not going to cool you down. Why No. 3. As my summer break will soon be coming to a close, which means, I will have less time to post as I would like to. So, there maybe day's where you may not hear from me, until my semester is over. Therefore, I just want to give you the heads up ahead of time. Why that's it for me and Living Better Cafe. But, before Coffee Talk lets the secret out, Katrina has a story she wants to share. Why take it away Katrina. Why I do not mind if I do.

Welcome yet again to another Secret Ingredient fix post, Coffee Talk has yet another post that is from one of, Katrina's favorite food researcher. And will be posting another recipe from, yet again food researcher Todd Wilbur, As Coffee Talk knows how Crazy Katrina is about her favorite food researcher Wilbur. Why if you have not heard about Todd Wilbur, Katrina would re share the story again.
Welcome once again to another Secret Ingredient fix post, this post that Coffee Talk will be posting about has to do with one of my favorite food researcher, his name is Todd Wilbur, I know some of you may or may not have heard of him. Well he is, the author Top Secret Recipe books. Todd Wilbur has been out there for some time now, and the first time, I came across him, I was sitting in my living room with the remote in my hand. I was flipping through channels, when I struck by what was on the Food Network channel. So, I of course stop flipping through channels and watched what Wilbur was making. Now I can not remember exactly what he was making. But, I will say this: Wilbur has a lot of tricks up his sleeve's, and I honestly do not know how he does it. What he does is remake your favorite restaurant meals, so that you can enjoy them without spending a lot of money for the dish. May that is so what like me--to some degree, I believe. So, I will hand it back over to Coffee Talk and before I go, I want to say: "Know your food before taking the first bite."

Thanks again Katrina for sharing yet another story with your follower, As Coffee Talk enjoys hearing food related stories. Why speaking of stories, Coffee Talk has a recipe to share with you all, and it's a spin on "Reese Cup". Coffee Talk will be using  Almond Butter because there are a lot of people who live with tree nut allergies, and that's not fun. So, with that said here goes the recipe.

Reese Cup


12 cup cake paper
1 12 oz. Pkg. milk chocolate chip
1 c. Almond butter * (if you are allergic to Almond, you can always find other butter substitutes.)
1 1/2 c. powder sugar
1/4 tsp. course Himalayan Salt

Directions:

1. You will need to cut off half of the cup cake paper. So, that the paper is shallower.

2. Bring about an inch of water to a simmer in a sauce pan. Set a heat-proof mixing bowl over the simmer water, making sure the water does not touch the bottom of the bowl. Stir chocolate occasionally as it softens. When do you know to remove the bowl? When you have just a few not melted pieces left in the bowl. And the heat that remain around the bowl, will melt the rest of the chocolate.

3. Using a teaspoon, spoon in small portion of the chocolate in to the middle of the cup cake paper. sketch the chocolate up on to the edge of the cup cake paper, using the back of the spoon. Coat the entire cup cake inner paper with chocolate, and then place the cup cake paper inside the muffin tin. Repeat until all compartments of the cupcake tin becomes filled up, Then place in the refrigerator. So that the chocolate can harden.

4. Combine Almond butter, powder sugar and salt in a medium size mixing bowl.

5. When the chocolate mixture has harden remove from the refrigerator, Pour almond butter mixture inside the cup cake tins. (following step 2, for heating up almond butter mixture.)

6. Spoon small portion of the almond butter in to each of the chocolate filled paper cups. Making sure to leaving extra to layer in chocolate, until the mixture harden giving about ten minutes. Using your finger, or a back of the spoon smooth out the  almond mixture. Place back in the refrigerator, until mixture has harden.


7. When the almond mixture has harden remove from the refrigerator, and add in the chocolate mixture. re-heat the chocolate on top of the stove. Once the chocolate has melted, spread over top of the almond butter and place back inside the refrigerator, until harden. And what do you know, you have a Reese Masterpiece in the center of your own kitchen.

Serves: 1

This Milkshake has nothing on any restaurant. Especially, if you're looking for a Milkshake that is boost with tons of vitamins that will give you a lot of energy.

1/2 c. Banana
1/2 c. Cherries (if cherries have pits in them remove them, before placing them inside the blender)
1/2 c. milk ( you can omit the dairy, if you are a vegan/ vegetarian)
1 tsp. flax seeds
1 1/2 tsp. Sugar (Coffee Talk has omitted the sugar, when making this recipe. But, Katrina enjoyed it a lot as this is another beverage that filled her up.)

Direction:

Place the Banana, Flax seeds and Milk in the blender, and push the Milkshake button, until ingredients are completely blended together well.

Living Better Cafe is here to, bring you one of Katrina's all time favorite dishes. As Katrina would once again share a story with you. Why take it away Katrina. I do not mind if I do Living Better Cafe.

Here I go again follower, My name is Katrina, as you can see that I am the person behind the computer typing way daily making sure that, I have your post ready to read when you hop on your computer. So, I have a little story to tell about this recipe here because this recipe goes back to the year, I want to say 1994 or 1993 either one is good. I was in high school with my class in the kitchen, getting ready to prepare this yummy recipe. As one of my teachers and a classmate was in the kitchen making this dish, I of course was eating and talking about how good this dish was, that I wanted to make this for dinner. So, my teacher wrote note on the recipe that she handed out to everyone in the class. As the note read: Mrs. ? today in class Katrina and Chris made this recipe, and Katrina would like to make this at home. So, that same day I got my wish, I made spinach pie for dinner. Okay Living Better Cafe, I am so excited to handed it back to you.

Thank you Katrina! Living Better Cafe is back and is here to bring you Katrina's favorite dish "Spinach Pie". Now let's make that "Spinach pie bites".

Serves: 10 1/2 dozen

1 egg, lightly beaten
1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed dry
2 c. (8 oz.) crumbled feta cheese
1 c. (8 oz.) 4% small-curd cottage cheese
1 c. mushrooms, chopped
3/4 c. Margarine, melted
16 sheets phyllo dough (14x9 inch size)

Directions:

1. Preheat your oven to 350. In a large mixing bowl, mix in egg, spinach and cheeses. using a pastry brush, Brush the inside of your baking pan with Margarine.

2. Place one sheet of Phyllo dough inside the prepared baking pan; and brush with margarine. Layering with seven more sheets of phyllo dough. Spread top with spinach mixture. Top with remaining phyllo dough, brushing each sheet with butter. (If you have any phyllo dough left over covered with plastic wrap and a damp towel to prevent the dough from drying out.

3. Bake for 35- 45 minutes or until golden brown.

So, if you are still wondering around your local hardware store, you can pick up any scrap wood you can find in the bins they have in the store. 4. Location, Location, Location is always the key in starting a garden. And with that comes temperature too. Therefore, if you have an unused book shelf or anything that you can place, your starter plants on, would definitely be a perfect spot.

5. Time is the key. Yes that is right having time, or for better terms. Knowing the right time to start planting your seeds, and with that come with finding the right soil for your seeds. So there is a lot of time put into starting your garden.

6. There is no garden without water. So, once you have everything, you need do not forget the most important factor here, and that is Hydrate your plants when they need moister.

Millet all started years back, actually it has been in the Asian cultivation over 10,000 years ago. Millet has been a major food supplement to the human history, as this grain comes from Asian and Africa. It also grows fifteen feet tall like corn on the cob (While this grain looks like corn when it grows, too). Millet is one of the fastest growing grains, and does not need a lot of rain. Bacon-Cheddar egg white omelet

Today Living Better Cafe Presents...Coffee Talk is coming to you with this Yummy goodness no Gluten recipe that, you are sure to love. Living Better Cafe Presents...Coffee Talk will have you saying: Oh Gluten, What Gluten? Gluten-Free Me.

Serves: 2

2 Tbsp. E.V.O.O
1 sm. Onion
1 bell pepper (your color of choice)
4 egg whites
2 Tbsp. milk ( you can use non-dairy,such as: Almond,Rice,Soy and etc.)
3/4 tsp. Course Himalayan Salt
1/8 tsp. Ground pepper
2 oz. Cheddar cheese
4 strips lean turkey bacon (you can use vegan bacon, if you are vegetarian or vegan)

Directions:

1. Cook bacon in a dutch oven skillet over medium-high heat until crisp. Remove with a slotted spoon to paper towels to drain and cool; crumble the bacon and set aside.

2. Add 1 Tbsp. E.V.O.O in a medium skillet over medium heat. Place in the onion and bell pepper inside of the skillet. Cook for 4 to 5 minutes stirring occasionally until vegetables become tender.

3. As the vegetables are getting happy, beat in the egg whites with milk,1/2 tsp. both salt and pepper.

4. Shred Cheddar cheese in a small bowl, and set aside.

5. When the oil is hot add in the egg mixture and cook the egg for about 2 minutes or until the eggs begin to set on the bottom of the pan. Gently lift the edges of the omelet with a spatula to let the uncooked part of the eggs flow toward the edges and cook. Continue to allow the eggs to cook for 2 to 3 minutes or until the center of the omelet starts to look dry.

6. Sprinkle the crumbled bacon, Cheddar cheese in the center of the omelet. Using a spatula gently fold one edge of the omelet over the vegetables. Let the omelet cook for another two minutes or until the cheese melts.

We all know how good it is to have your fruits and your protein too. But, I bet you never thought to actually combine the two. Why that's okay because you can with this recipe. And we are tossing away the can, and going fresh. So, no worries here. Your brave right? I know you are Go Vegan!

1 c. Millet
1 c. Blueberries
1 c. Strawberries
1 ripe Mango
1 c. apples, chopped and cored ( I prefer the Honey crisp, they are super sweet and tasty)
4 Tbsp. raw cashews * (omit if you have any allergies to tree nuts)
2 tsp. fresh chopped mint

Directions:

1. Cook millet for thirty minute, and set aside to cool for 10 minutes and fluff using a fork.

2. In a large bowl combine all the fruit and toss gently, and serve with your favorite dressing.

Orange dreamsicle pudding

Living Better Cafe know's how much you love your desserts. Especially, this Orange dreamsicle pudding. Why this would make you want to feel like a kid again and that's okay.

Serves: Varies on the oz of the pudding mix.

1 Pkg orange jello mix
1 container of whipped cream
1 Pkg of vanilla pudding
1 can of mandarin orange, drain

Direction:

1. Heat water up.

2. Place orange jello mix into small mixing bowl and pour hot water on top.

3. Mix the jello until it's dissolved completely.

4. With an electric mixer or wired whisk, beat in instant vanilla pudding to jello mixture.

5. let stand for five minutes

6. Fold in the whipped topping into jello/pudding mixture until well blended.

7. Fold in mandarin juice.

8. Place mixture in the refrigerator until mixture begins to set.

Welcome yet again to another Secret Ingredient fix post, this post that Coffee Talk will be posting about has to do with one of my favorite food researcher, his name is Todd Wilbur, I know some of you may or may not have heard of him. Well he is, the author Top Secret Recipe books. Todd Wilbur has been out there for some time now, and the first time, I came across him, I was sitting in my living room with the remote in my hand. I was flipping through channels, when I struck by what was on the Food Network channel. So, I of course stop flipping through channels and watched what Wilbur was making. Now I can not remember exactly what he was making. But, I will say this: Wilbur has a lot of tricks up his sleeve's, and I honestly do not know how he does it. What he does is remake your favorite restaurant meals, so that you can enjoy them without spending a lot of money for the dish. May that is so what like me--to some degree, I believe. So, I will hand it back over to Coffee Talk and before I go, I want to say: "Know your food before taking the first bite."

Thanks Katrina for sharing yet another story with your follower, As Coffee Talk enjoys hearing food related stories. Why speaking of stories, Coffee Talk has a recipe to share with you all, and it's a spin on "Beer nuts". Coffee Talk will be using Chickpeas because there are a lot of people who live with tree nut allergies, and that's not fun. So, with that said here goes the recipe.

Hot & Spicy Chick Peas

Adapted from: http://www.foodandwine.com/recipes/spiced-chickpea-nuts

Serves: 3 1/2 cups

1 lb. dried chickpeas, soaked overnight and drained
Course Himalayan salt
1/4 c. E.V.O.O
1/2 c. nutritional yeast
2 tsp. sriracha powder
1/2 tsp. Cayenne pepper

Directions:

1. In a large cast iron pot, cover the chickpeas with 2- inches of water and bring to a boil. let simmer over low heat. stir the chick peas, until peas become almost tender, about 1 hour and 15 minutes; add in more water as needed to keep the chickpeas covered. Add in a pinch of salt for the remaining 15 minutes of the cooking processes. Drain chickpeas, and let dry on a prepared baking sheet lined with a paper towel.

2. Preheat your oven to 425 line the baking sheet with parchment paper. In a large mixing bowl, toss the chickpeas with E.V.O.O. Add in the nutritional yeast,sriracha powder and Cayenne pepper and toss until completely covered well. Spread the chickpeas on the prepared baking sheet and season with salt. Bake for about 45 minutes, stirring the chickpeas a few times, until they are crisp.

Egg drop Chicken Soup

Today Living Better Cafe Presents...Coffee Talk is coming to bring you an out-of-this-world recipe, that will have you rethinking about never stepping, your foot in another restaurant door again. So, Grab your cooking gear, and let's begin.

Wow yet another Asian cuisine!, Coffee Talk knows, you will for sure love. I Katrina can not get enough of eating Asian dishes. Especially, this dish Coffee Talk will be posting, it seems like ages ago since, Katrina has had some Asian style soup. Coffee Talk is making her so hungry. So, let's just get straight into creating this wonderful dish. So, you can enjoy it too.

Serves: 4

You will never have to step foot another restaurant again, after creating this tasty soup. Why Coffee Talk took a different yet unique spin on this too. Let's call this: "Egg drop Chicken soup"

4 c. Chicken broth, divided
1/8 tsp. ground ginger
2 Tbsp. chopped fresh chives
1/4 tsp. Course Himalayan Salt
1 1/2 Tbsp. Cornstarch
2 eggs
1 egg yolk
5 oz. chopped cooked chicken breast
2/3 c. sliced carrots
1/3 c. chopped celery
Hot Chili oil (drizzle a few drop into your bowl, when comes time to serve.)

Direction:

1. place 3/4 c. of broth aside, and pour the remaining into a large sauce pan. Add in the salt, ginger, and chives, veggies, and chicken into the sauce pan bring a rapid boiling point. In a small mixing bowl, combine 3/4 broth and cornstarch until cooperated smoothly, and set aside.

2. In a different small mixing bowl, whisk the eggs and egg yolk together using a fork. Slowly drizzling in the egg, a little at a time from the fork,or whisk into the boiling broth mixture. The egg should cook quickly once it hits the broth. Stir in the cornstarch mixture gradually until the soup reaches the consistency you want.

Hydrogenated oils are: unnatural fats that is in your food, the oils that can cause you and your body harm. Scary eh!, why when Katrina started researching this for you, She herself seem a bit shocked about it to. But, it was not as a big shock as you may think because she knew just a bit, and now Katrina knows more now. Therefore, Living Better Cafe now wants to go a bit deeper into the What is Hydrogenated oils.

When it comes to Hydrogenation, it's a process that is a liquid of unsaturated fat that is then turned into a solid form. So, during this process its called trans fat. The fats that seem to become the biggest HYPE in the food industries these days, and the most leading cause of diseases. Especially, the one we all seem to become familiar with, and Living Better Cafe does not say this with pride because Cancer is not good, no matter what way you look at it. Therefore, Hydrogenated oils can affect your Heart health because they are the ones, that increases your bad levels in cholesterol, which is your (LDL) and lower your good cholesterol levels, which is your (HDL).

Now this leads Living Better Cafe in another direction, and yes you're wondering where? Living Better Cafe is going to take you down the culprit food aisle. You heard, The foods that Big H is hiding in, and think we can not find him/her.

* Margarine
* Vegetable shortening
* Packaged foods
* Baked good and get this even (homemade), sound even scarier. Especially, when you are trying to stay healthy because you know whats going into your food.
* Fried foods, Including those fast food restaurants.
* Do you want creamier in your coffee, or tea. Sorry no thank you Sir/madam.

Now, what is the best solution to your problem, that is the question and Living Better Cafe is going to take you there. Let's say as we speak. As for many years you have heard Margarine is the healthiest option, well as Living Better Cafe has always been posting the word: "Margarine", Katrina has found out that, saying No to Margarine is better because it has Big H in the ingredients. So, What is the healthier version to cook with? Olive Oil, that's right Olive oil or other oils. Like, Safflower oil and canola oil etc. And the best way to cook your food is, to bake or broil your food, which cuts back on the trans fat and calories. But, Living Better Cafe and Katrina would have to beg to differ on the calories end. But, that's a whole different story there.

Pineapple upside down pancakes

Living Better Cafe Presents...Coffee Talk, has taken your favorite dessert "Pineapple upside down cake" and turn it in to Pineapple upside down Pancakes. Why of course, you can always omit any ingredient in this recipe, if you have in allergies, or whatever the case maybe. Therefore, Enjoy this Yummy Breakfast.


2 c. pancake mix ( You can either use store brought, or you can make your own batter).
1 1/3 c. water
1/4 c. brown sugar
1 can (20 oz.) pineapple slices, cut into fourths
1 can (20 oz.) Cherries


Preheat your pancake griddle pan, or fry pan to 375. Combine together the pancake batter and water with a wired whisk. Keep in mind that your batter will have some lumps inside of it. Pour about 1/4 c. of your batter on a preheated pan. Coffee Talk it up with just a Tbsp. of sprinkle of brown sugar, on the batter as it's on the pan. Add on Pineapple slices, with a cherry after you have finished with sprinkling with brown sugar. Cook until you begin to see bubbles to form around, the edges and
then flip over, and allow to cook for 1 to 1 1/2 minutes.

You will never think about hitting another restaurant, for another Milkshake again after you taste this yummy Milkshake.

1/2 c. Banana
1/2 c. Almond milk
1 1/2 tsp. Sugar (L.B.C has omitted the sugar, when making this recipe.But, Katrina enjoyed it a lot as it really fulled her up.)

Direction:

Place Banana's and Milk in the blender, and push the Milkshake button, until ingredients are completely blended together well.

We all know how important it is to eat to good health. But, did you know that what you eat can cause damage to your body? Yes it can and Coffee Talk is bring you a list of foods that can cause Cancer, or other items. Like, the Microwave. Yes the wave in the Microwave can cause cancerous cells to grow in your food, and then you go and consume that food, which can give you Cancer. Now Coffee Talk is not saying that, every time you eat this food, you are more likely to get cancer. And Coffee Talk is not a doctor either. But, Coffee Talk is a food resource blog/ Recipe blog that cares about you. So, that is why every Friday of the week, the creator of Coffee Talk will be posting up good information for you to know. And if you already know this information, it would not hurt to share it with someone you truly care about, or even refreshes your memory.
Every day there is something in the news about food, and how some foods has lately been linked to causing Cancer. Why that is super scary when you think about because food suppose to carry good nutrient. But, here is where it gets more scarier then ever. And we are only talking about food here, as I know there are other things as well.

So, Coffee Talk has a list of nine items that can give you cancer. Therefore, please consider reading further into this article and do share with someone you care about because Coffee Talk care about you, and would love for you to spread the word.

Six foods that are most likely to cause "Cancer" :(

1. Microwavable Popcorn: Did you know that it's the chemicals that is places inside the bag. So, when you pop the bag in the microwave and turn it on, the heat is releasing the chemicals, which is also getting on the flavoring and in your pop corn. What is this chemical called? perfluorooctanoic acid, and this chemical has been linked to causing: Kidney, bladder, liver pancreas and testicular cancers. What? they in turn call this "Popcorn lungs because it causes your lungs to collapses,which in turns makes it hard for you to breathe. * (Hint: if you really want to enjoy a bag of popcorn, simply go to the $ store and get a pack of brown lunch bags, and a bag of popcorn.) Coffee Talk will post a recipe for Homemade Microwave popcorn very soon.

2. Canned Goods: Yikes! when we think buying canned foods is inexpensive, which it is. We have to become more fully aware of the chemicals once again, placed inside the cans. As the companies lined the cans with a chemical called, bisphenol-A, or for better terms BPA. And this chemical has been linked to causing Breast cancer, Prostate cancer,infertility, early puberty, metabolic disorders and type-2 diabetes, and that's been found by the Breast cancer foundation. But, what seem more so the problem are canned tomatoes. And that's because it's high in acidity, which causes the chemical BPA to latch from the can straight to the tomatoes. Now if you want tomatoes, it's best to get to either grow them yourself, or buy them from the grocery store.

3. Salmon: Lets make that farmed raised salmon. Once again yet another scary moment. What is it about the farmed raised salmon that cases cancer. Salmon has been dye with chemicals contain with high levels of PCBS, Mercury and Dioxin--and those are three-cancer causing chemicals. Which give the salmon its pinkish coloring. Therefore, if you want Salmon its best to go out and catch it yourself, or buy wild Salmon because it more healthier, and they're lower omega-3 fatty acids.

4. Hydrogenated Oils: Yes! we may not have yet covered this. but, Processed foods are loaded with Hydrogenated oils, and hydrogenated oils are used as a preserve processed foods. As theses oils help to give the food, a much appealing look to keep it from spoiling faster,than any other food. Those's oils hold high levels of omega-6 fatty acids, which can causes heart disease and increase the risk of various malignancies, particularly skin cancer. Now Coffee Talk is not telling you to omit omega-6 from your diet because your body still needs some omega-6, allowing with omega-3. So, what is your best choice when it comes to find oil. Coffee Talk says: "Olive Oil"

5. Processed foods: I Katrina knows how everyone feels right about now, Coffee Talk just brought up the word processed foods, and what does that word normally link to? Meats. Like, Hot dogs, Sausages, and etc. Why? processed meats holds a lot of chemicals and preservatives, that includes sodium nitrates. This salt is found in a lot of processed meats and red meats a lone.

6. Breads: Why who all love to have a sandwich every now, and then? I know you all love it, and so does Katrina. But, did you know that the bread, you and Katrina consume have chemicals in them. Now what type of chemical are inside the bread? This chemical is: potassium bromate, potassium bromate is found inside the flour, as this helps whiten the bread. As this chemical is linked to nervous-system disorders.

Today Living Better Cafe Presents...Coffee Talk is coming to bring you a recipe that, you never knew exist by revealing the Top secret ingredient, and Living Better Cafe Presents...Coffee Talk knows you are going to enjoy every secret that been reveled.

But, before Coffee Talk lets the secret out, Katrina has a story she wants to share. Why take it away Katrina. Why I do not mind if I do.

Hello my followers, Why don't I introduce myself again. My name is Katrina, and I am the blogger behind both Living Better Cafe and Coffee Talk. Yes I enjoy eating food like, I hope you all enjoy eating as much as I do. Well, I of course have a story to share with you, as I hope you enjoy reading this wonderful story. This story however about this recipe. It was a fall or winter day, when my mother was in the kitchen cooking up this dish, which I tell you was yummy. I became excited watching her prepare everything that goes into this dish. When I looked down to read a book and in the book it said: "Lion Head Soup", I grew even more exited because it was something different, and I love trying new dishes. Especially, this dish right here. And no there really is no real lion head in the soup, as Coffee Talk will post very soon. So, after the dish was completely finished cooking, I of course eat the soup and feel in love with it. So, Why don't I hand it back over to Coffee Talk.

Thank You Katrina :) Why that's a very nice story there, and now it's time for Coffee Talk to show you something furthermore about this recipe. Lion Head is just the name of this Shanghai-style meatball. What an Asian style cuisine!, As this recipe calls for "Pork", Which Coffee Talk will substitute it for Turkey, or Chicken.


Serves: 4

1 lb. ground lean turkey
1 egg
1 Tbsp. cornstarch
1 Tbsp. minced fresh ginger
1 tsp. course Himalayan salt
2 green onions, chopped and separated
1 Tbsp. Extra virgin olive oil
1 head of Napa Cabbage, cored and chopped into chucks
2 c. low sodium vegetable broth
1 Tbsp. Soy sauce
2 c. water, if needed
2 tsp. sesame seed oil
1 tsp. Crushed red pepper flakes


Directions:

1. Blend together the ground turkey, egg, cornstarch, ginger, salt, and half of the chopped green onions together in a bowl. using a wooden mixing spoon. Set aside.

2. In a wok,heat the e.v.o.o over high heat. When the oil is good and hot, place the Napa cabbage in and begin to fry, stirring constantly, until cabbage begins to wilt, for about 2 to 3 minutes. Pour in the broth, water, and soy sauce. Bring to a boil, then lower the heat down to medium.

3. Use a small or medium size Ice cream scoop, to form the meat mixture into 1-inch meat balls. Drop them into the boiling soup. After you have added in the last meatball, cover with a lid and allow to simmer for about 10 minutes. After 10 minutes begin to taste, and adjust to your tastes. Finishing it off with a garnish, Green onions and drizzle of sesame seed oil and crushed red pepper flakes.
