French Toast Nuggets

Move over original style French toast there's a new style in town and, they are bite size perfect for little tikes.

Serves: 4

1 French baguette, sliced into 1-inch pieces
5 eggs
3 Tbs. coconut sugar
1 Tbs. cinnamon
1 tsp. vanilla extract
1 c. milk
oil for frying

Directions:

1. In a large glass mixing bowl, whisk together the eggs, coconut sugar, cinnamon, vanilla extract and milk.

2. Pour mixture into a shallow dish and place the bread nuggets in it. Toss to coat. allow to sit for 15 minutes, that way the nuggets can get good and saturated.

3. Heat the oil in a large dutch oven skillet. Place a few nuggets in at a time in the skillet and fry on both sides until golden brown. Continue with the remaining nuggets.

4. serve with whatever topping of you're choice.

Curry Lentil with fried tofu

Serves: 4

1/4 c.vegetable oil, divided, plus more for frying
1 medium onion, coarsely chopped
4 cloves garlic, chopped
2 Tbsp. finely chopped ginger
3/4 tsp. ground cumin
3/4 tsp. ground coriander
3/4 tsp. ground cardamom
3/4 tsp. turmeric
1 Tbsp. curry paste
1 1/2 tsp. curry powder
3/4 tsp. cinnamon
1 (13 1/2 oz.) can unsweetened coconut milk
1 1/4 c. (1/2 lb.) dried red lentils, rinsed
3 (3") strips lemon peel
2 Tbsp. lemon juice
1 1/2 tsp. course Himalayan salt, divided, plus more to taste
1/2 tsp. ground Red pepper, plus more to taste
3/4 tsp. red pepper flakes
1 tsp. cumin seeds
1/4 cup cornstarch
1/4 lb. firm tofu, patted dry and cut into 1/2" cubes
1/2 c. chopped cilantro

Directions:

1. In a large dutch oven pot, heat 2 Tbsp. oil over medium heat. Adding in onion and cook, stirring a few times, until soft,for about 7 minutes. Reduce the heat to low and add in garlic, ginger, ground cumin, coriander, cardamom, turmeric, Curry paste, curry powder and cinnamon; cook, stirring often, until fragrant, about for 6 minutes. Add in coconut milk, lentils, lemon peel strips, and 1 quart water and bring to a boil over high heat. Simmer over medium-low heat, stirring occasionally, until lentils are tender, for about 25 minutes. Discarding lemon peel strips.

2. Puree soup in a blender and return to the pot. Add lemon juice, season with 1 1/4 tsp. salt and 1/2 tsp. red pepper, and keep hot.
3. In a medium saucepan, heat the remaining 2 Tbsp. oil. Add red pepper flakes and cumin seeds; when they sizzle, pour into a small bowl , and set spice mixture to the aside.

4. using the same saucepan(may sure its cleaned out) and add enough oil to come up 1". Heat oil just until shimmering. Meanwhile, in a medium bowl, blend together cornstarch and 1/4 tsp. salt. Toss tofu cubes in cornstarch mixture, shaking off excess. Dip a tofu cube into the oil. If it starts to sizzle, add half the tofu to the hot oil and fry over medium heat until pale golden and crisp, for about 5 minutes. Drain on paper towels and repeat with remaining tofu cubes.

5. Once soup the is done add to you're bowl and, enjoy with a dollop of low fat sour cream.

Fruity dump cake

Serves: Varies

1 box spice cake mix
2 cans spiced apple pie filling
2 sticks of butter
Empty spiced apple pie filling into pan
Pour spiced cake mix over filling evenly
Place slices of stick butter over mixture
Bake at 400
1 hour
Delicious while hot with scoop of vanilla ice cream!!!!

Chicken Salad Pizza



Serves: 12

12 scallions, chopped thinly
3 lg. carrots,shredded
3 bell peppers, cut 1/2 inch pieces
1 1/2 lb. snap peas, halves
6 c. chicken breast meat, cooked & chopped
1 1/2 c. fresh cilantro leaves, chopped
1 1/2 c. olives, chopped
1 1/2 c. fresh basil, chopped
1 1/2 c. fresh oregano
1 1/2 c. blanched silvered almonds, toasted
2 c. Alfredo sauce
2 c. Cheese of your choice
Garlic powder
Red pepper flakes

Pizza Crust
2 (12 in.) pre bake Pizza crust

Direction:

1. Place crust on a cookie sheet, then spread the filling mixture over crust. Bake until it's crisp and warm, according to the directions on the package.

Living Better Suggestions:
You can also turn your Thanksgiving Turkey into a pizza, Just make sure you don't have dressing/ stuffing inside of it.

In this edition I will be sharing some cool tips that won't break your bank, and will keep you smiling from ear to ear all the time.

Once again thank you for sticking around, for this Fourth and last edition of Money saving tips for this November edition. I will be bring you different Money saving tip's daily on saving cash in your wallet, every Tuesday.

My food shopping can be quite stressful at times but, if you follow these helpful tips Stress will be a goner before it even get there.

My "BIGGEST" food pet peeves is, seeing people strolling in the store snacking off food that has no label. Reading Sample's! So, Why I am sharing this with you? Because this is a sign that say's my number 1 tip.

1. Eat before leaving your house reason being is because people who don't eat before leaving, have a tendency to snack off of food in the store.

2. Make your shopping list a head of time. For example, you notice your low on flour jot it down, and post that list on the refrigerator so; its always there for the net item to come along.

3. Break your shopping in half. For example, you have your children or partner with you divide the list in half. (Hint,Hint: if you have young children this is a great way to teach them about money values, and how to spend money).

Breakfast Ravioli

Ravioli isn't just for Lunch, or Dinner you can enjoy the taste for breakfast to.

Serves: 4

Filling:
11 oz. lean ground breakfast sausage
1/4 tsp. eggs, scrambled
1/4 tsp. shredded potatoes
1 (16 oz.) pkg. frozen ravioli cheese, leave at room temperate - (add cheese when you start to fill up the pasta)

Pasta:
3 c. all-purpose flour
2 lg. Eggs
3 Tbsp. Water
1 tsp . Olive Oil
1/2 tsp. course Himalayan Salt

Egg Wash:
1 Egg, beaten
1 Tbsp. Water

to Cook:
1/2 gallon boiling Water

Directions:

1. cook the filling in a skillet, until cooked all the way through.
In a small bowl, combine sausage, potatoes, egg, set aside.

2. Pasta: In a glass mixing bowl, make a well in the flour. In a small bowl, combine eggs, water, oil and salt. Pour egg mixture slowly into flour and mix with two fingers until completely incorporated. Knead dough for 7-8 minutes. Working with 1/4 of the dough at a time, roll into a rectangle. Spread filling evenly over half of dough. Brush other half of dough with egg wash. Fold that half of the dough over filling and lightly pat to remove air then seal edges. Sprinkle the dough and the roller with flour, press firmly and cut into ravioli. Cook ravioli in the boiling water, 6 ravioli at a time, for 6-7 minutes. Remove to a strainer.

Oatmeal-Cranberry Muffins



These muffins are another holiday favorite to display for this holiday season. The taste will have you and you're guest coming back for more.

serves: 1 dozen

1 c. plus 2 Tbsp. all purpose flour* gluten free flour
6 oz. uncooked regular oats
2 Tbsp. sugar * Sugar substitute
1/2 tsp. course Himalayan Salt
1 c. milk * (Almond, Rice, Soy)
1 egg
1/4 c. vegetable oil
1 c.fresh cranberry
1 Tbsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground nutmeg
non-stick cooking spray

Directions:

1. Blend together flour, oats, baking powder, sugar, salt into a medium size glass bowl; build a well in the center of the mixture.

2. Blend together milk,egg, and oil; add to the dry mixture, stirring just until moistened. Gently fold in cranberry.

3. coat muffin pan with cooking spray, spoon batter into pan filling 2/3 full. Sprinkle cinnamon, nutmeg over muffins, and bake at 425 for 20 to 25 minutes or until lightly browned.

Note:
When using sugar substitute the measurement are different, then the actual measurements.

Cranberry-Raisin pudding cake

This cake will WOW any guest on this holiday season.

Serves: 12

6 Tbsp. Margarine
2 c. Pure cane sugar
4 c. all-purpose flour
4 tsp. baking powder
1 tsp. course Himalayan salt
2 c.Evaporated milk
1 (12 oz.) pkg. cranberries
1 c. Margarine
2 c.Pure cane sugar
1 c. Heavy cream
1 tsp. Vanilla extract
1/3 c. raisins

Directions:

1. Preheat oven to 325. Grease and flour a 10 inch Bundt pan. combine together the flour, baking powder and salt. Set aside.

2. In a large glass bowl, cream together the 6 Tbsp. Margarine and 2 c. sugar until light and fluffy. Beat in the flour mixture alternately with the evaporated milk. Stir in the cranberries, Raisins. Pour batter into prepared pan.

3. Bake in the oven for 50 to 60 minutes, or until toothpick inserted in the center comes out clean. allow to cool in pan for about 10 minutes, then turn out onto a wire rack and cool completely.

4. Making the healthy Sauce: In a saucepan, combine 1 c. Margarine, 2 c sugar, and cream. Bring sauce to a boil over medium heat, reduce heat and let simmer for about 10 minutes. Remove saucepan from heat and stir in 1 tsp. vanilla.

Heart Healthy Sliders

Serves: 12 miniature burgers

1 1/2 lbs. extra lean ground turkey*
1 1/2 lbs. ground chicken
1/3 c. fresh parsley, minced
1/2 tsp. ground cumin
1/2 tsp. smoked paprika
1/2 tsp. lemon pepper
2 cloves garlic, minced
2 shallots, minced
1 egg yolk
course Himalayan salt*
2 Tbsp. Vegetable oil*
12 mini burger buns or small soft dinner rolls, warmed in the oven
12 small lettuce leaves
12 slices tomato
1 c. thinly sliced red onions
Mayonnaise
Mustard
Ketchup

Directions:

1. Combine together the turkey, chicken, parsley, cumin, paprika, garlic, shallots and egg yolk in a large glass bowl. Sprinkle with salt and pepper and mix. Divide the turkey, chicken mixture into 12 equal portions and, using your hands, shape them into 12 small burgers about 3 1/2 inches wide.

2. Heat the oil in a skillet and cook the burgers until a thermometer inserted into the center registers at 165 degrees F, about 3 minutes per side.

Money Saving tip Tuesday....Ice Trays

Welcome to another edition of Money Saving tips.
In this edition I will be sharing some cool tips that won't break your bank, and will keep you smiling from ear to ear all the time.

Once again thank you for sticking around, for this Third edition of Money saving tips for this November edition. I will be bring you different Money saving tip's daily on saving cash in your wallet, every Tuesday.
Do you have extra Ice trays laying around, and don't know what to do with them. I will give you some great money saving Idea's you thought was impossible.

Great for serving appetizers:

1. fill your tray up with appetizers, and leave it out on display.
Homemade candy:

2. After melt your chocolate allow it to cool, and place into ice tray then place into freezer until harden.
Miniature drink shoots:

3. filling the trays up with you're beverage of choice. (if it's fruit juice, you have about 3-4 months if they are in cubes)
Miniature dessert:

4. whether you're having dessert for yourself, or having a guest over. miniature desserts to go. Ex: rice crispy treat's.
Soon to expired food:

5. Whether it be dairy, or leftover soup place inside of an ice tray and freeze.
Flavor saver:

6. No matter what you're cooking, whether it be veggies, meat.
don't toss away the flavor, you can create a both or use that grease to flavor up you're next dish. How: Just pour it into an ice tray and freeze. (will last up to a month)

Spice's:

7. Mince up 1 Tbsp. garlic or 1 Tbsp. ginger and pop into freezer. Garlic and Ginger freezes pretty well in the freezer (up to 10 -12 months in freezer).
Leafy herbs:

8. You have any herbs, place them into the freezer (fresh herbs do better then dried) How: Just by, giving them a rough chop the in a food processor; or rough chop by hand. (last up to a month) you can (hint, hint: if frozen in water about a week. If frozen in oil about a month)

Smoothie saver:

9. having a smoothie and don't know what to do with the left overs? Why place them into your ice tray. they will last up to a week in the freezer.If your smoothie has full-fat dairy in it, it's most likely good for a month or so. If it's mostly produce and a non-dairy milk (Almond, Soy, Rice- it might get a little icy or freezer burnt after a few weeks).

If last week edition Hot out of the oven wasn't enough, here is yet another coffee edition for you to read. Researcher have found that drinking coffee daily can help boots the survival rate in many people with advanced (stage III) colon cancer, drinking four or more cups of caffeinated coffee daily lowered the risk of cancer recurrence or death during the study by 52 percent compared to those who drank no coffee. Just by drinking two or three cups per day was also beneficial, lowering the risk of recurrence or death by 31 percent.
While researcher have also, found that coffee has been linked to lower the risk type 2 diabetes as well, a condition known to increase the risk of colon cancer. It’s likely that compounds in coffee may lower the risk of multiple chronic diseases via similar pathways.
Looking to drink coffee for health benefits, make a cup of black coffee, without sugar, non-dairy creamer or cream, or flavorings. If you are dousing your cup of coffee in creamer, non-dairy creamer, sugar, and other sweeteners and flavorings, you are missing out on the therapeutic benefits and potentially harming your health.
The natural blend of polyphenol antioxidants are part of what makes coffee so healthy. However, some research suggests that adding dairy to your coffee may interfere with your body's absorption of beneficial chlorogenic acids.27 Meanwhile, if you add sugar to your coffee you’ll spike your insulin levels, which contributes to insulin resistance.
Also, coffee beans are one of the most heavily pesticides-sprayed crops. So, you should select only coffee beans that are certified organic. Remember, you will obliterate any positive effects if you consume coffee that's been doused in pesticides or other chemicals. Whenever possible, purchase sustainable "shade-grown" coffee to help prevent the continued destruction of our tropical rain forests and the birds that inhabit them.
There are many who say shade-grown coffee tastes better as well. In addition, you'll want to purchase whole bean coffee that smells and tastes fresh, not stale; if your coffee does not have a pleasant aroma, it is likely rancid. Grind it yourself to prevent rancidity, as pre-ground coffee may be rancid by the time you get it home. If you use a "drip" coffee maker, be sure to use non-bleached filters. The bright white ones are chlorine-bleached, and some of this chlorine will leach from the filter during the brewing process. Bleached filters are also notoriously full of dangerous disinfection byproducts, such as dioxin.
Finally, while it appears coffee in moderation is beneficial, be careful not to overdo it, as some studies have found adverse effects when about 10 cups a day or more are consumed. When referring to a “cup” of coffee, most research considers it to be five to eight ounces with about 100 mg of caffeine. In contrast, a small cup at many coffee houses starts at 12 ounces while a large cup may hold 20 to 24 ounces. Simply be aware of how much you’re actually consuming.

Breakfast Sushi

* Substitution

Serves: Varies

Pancake Crepes:

1/2 c. all purpose flour* gluten free flour
1-2 egg* egg substitute -(depends on the size of the eggs)
2 1/4 tsp. sugar
1/4 c. water
1/4 c. Milk* (Soy, Rice, Almond)
1/8 tsp. Course Himalayan salt
1 Tbsp. Margarine, melted
Vegetable oil

Directions:

1. In a glass mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and Margarine; beat until smooth.

2. Heat a lightly oiled griddle over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Sushi filling:

Serves: Varies

1/2 yellow onion, finely chopped
3/4 c. corned beef, finely diced
1 1/2 c. cooked potatoes, diced

Directions:

1. Melt the Margarine in a large cast Iron skillet over medium-high heat. Add in onion and cook until soft, for about 5 minutes. Add in corned beef and potato and stir to combine. Pressing the mixture down with a spatula to create a compact layer, lower heat to medium and cook until crispy, for about another 15 minutes or so. Meanwhile, make the crêpes.

2. Heat an Cast Iron skillet over low heat. Crumble a paper towel into a ball and dip one end into some vegetable oil. Lightly grease the skillet with the paper towel.

3. Pour in half the batter into the skillet and quickly swirl it around in all directions until it coats the bottom of the skillet evenly. When the edges are dry and the middle is just set, turn the crêpe over with a spatula and let the other side cook for 10 seconds. Transfer the crêpe onto a plate to cool. Re-grease the skillet and cook the remaining crêpe.

4. Using a sushi mat: roll the sushi, place an pancake crêpe on the bamboo mat. Place 1/4 cup of corned beef hash in a line on the lower third of the crêpe. Pull the bottom of the mat up to help roll the crêpe over the filling. Pull it taught toward you to make a tight roll then keep rolling to the end. Cut into six pieces. Repeat with the remaining Pancake crêpe and breakfast hash.

Tangerine Mango Smoothie

Serves: 2 (makes 4 cups)

1.5 c. Orange juice, Freshly squeezed
1.5 c. Tangerine Juice, Freshly squeezed
1/2 c. water, or more if needed
1/4 c. avocado
1/2 tsp. finely grated lime zest
2 c. frozen mango
1 tsp. Chia seeds
1/2 tsp. Wheat germ
1 tsp. Pure maple syrup, to taste (optional )

Directions:

1. Add in all of the ingredients in a blender and blend on high for about 30-60 seconds, until smooth and creamy.

S'more cobbler

Serves: varies

1 box chocolate cake mix
1 c. Milk* (Almond, rice, soy)
15 oz. Chocolate pudding
1/2 c. Margarine
6 Graham crackers, whole
1/2 c. Coacoa nibs
40 lg. Marshmallows
Chocolate sauce (garnish)

Directions:

1. Blend together milk, pudding mix; then placing into a well greased 13x9 baking dish.

2. Place broken in half graham cracker over top of pudding mixture, leaving space in between each one.

3. Adding in 1/2 c. Coacoa nibs.

4. Spread across the dry cake mix, place about 1 Tbsp. margarine on top of the dry mixture.

5. Bake in oven at 350 for about 25 min, mixing the mixture a tidbit until no dry patches.

6. Adding on the marshmallows and bake for about 8-10 min, until marshmallows are slightly golden brown. Doll cobbler up with chocolate sauce, once cool.

Buffalo style meatloaf

This recipe will take you where no other recipe has taking you before, As this recipe has been adapted into a much leaner recipe.

Serves: 8

1 1/2 lb. ground extra lean turkey
1 c. dried bread crumbs
1/3 c. celery, diced (about 1 rib)*
1/3 c. bell pepper, diced*
1/3 c. crumbled gorgonzola cheese
1/4 c. white onion, diced*
1/2 c. milk (Rice, Soy, Almond)
1/2 c. Rooster sauce (Asian Hot Sauce)
1 lg. egg (egg substitute)
1/2 tsp. Course Himalayan salt
1/4 tsp. garlic powder
1/4 tsp. fresh parsley, chopped*
1/4 tsp. fresh dill, chopped*
1/4 tsp. Old Bay seasoning
Pinch of black pepper
Pinch of Cayenne Pepper
Living Better Topping:
3 Tbsp. Rooster sauce (Asian Hot sauce)
1-2 Tbsp. crumbled Gorgonzola cheese
1-2 Tbsp. crumbled blue cheese

Directions:

1. Preheat oven to 350. Spray your loaf pan with cooking spray and set aside.

2. In a large bowl mix ground turkey, bread crumbs, celery Gorgonzola and onion, bell pepper.

3. In a small bowl whisk together milk, hot sauce, egg, salt, garlic powder, parsley, dill and pepper.

4. Pour in wet ingredients into turkey mixture and mix until well blended.

5. Place mixture in prepared loaf pan and firmly press.

6. Brush remaining hot sauce and bake in preheat oven for 1 hour or until internal temperature reaches 165 degree Fahrenheit.

7. Sprinkle with additional Gorgonzola cheese, blue cheese and continue to cook until cheese is melted, give about 5 minutes.

8. Remove from oven and allow to set for 10 minutes before serving.

1. Whoa whoa! don't toss that glass empty spray bottle out, better yet save it for you're cooking oil. Just simply filling up the spray bottle with the cooking oil of your choice, and there no need to splurge on the cooking oil already in the can. - you will be surprised at how much time,and money saving; I just saved you.
Now if you don't have a glass spray bottle no worries, you can find them at any store you shop at for less-(* hint, hint: $ general, or Dollar tree)
2. Does you're cheese grater have you in a sticky situation? Well not anymore. I will put your brain at ease with this one,and make your life more simpler to, and how ? Just spray your cheese grater with cooking spray before grating your cheese.And no more stuck on cheese on that grater.
3. Do you have leftover that will stick to your plastic container? Why not spray the inside of you're container, before applying your leftover into them. And Bam less stickish you have to worry about when it comes to cleaning.
4. Are you like me when it comes to peeling garlic? Spray your hands with a little bit of cooking spray, and lubricate your hands before peeling garlic. This also works when your making Rice Crispy treats too.
5. Put the De in grease for your utensil, to keep sticky food from sticking while your prepping for a meal.

Welcome to Hot Out Of The Oven food news, I have yet another edition of food news coming straight from no other source but, Living Better Cafe of course.
As you have read through many editions of (H.O.T.O), since I have started this food news addition. You have became more wiser about what you buy,and place into your mouth. While I am very happy to continue to keep "Hot of the oven" going as much as you keep enjoy reading it every Monday.
In this edition I will be covering the Fact's, and Myths; plus Benefit's of Coffee. As most of the world consumes this beverage each,and every day.
BUT, what is the fact an Myth behind this Addicted drink? Don't worry I will cover it and have you rethinking more healthier, I Hope.
You say a cup of coffee in the morning may give you more energy in those early arrival mornings but, did you know that coffee is one of the main cause's of insomnia; so if you have a case of insomnia than you want to break away and grab for a slight different beverage.
Mr. Coffee has it's down perks especially if you have medical condition, like high blood pressure, an overactive thyroid, or suffer from anxiety. Did you know that? Caffeine may help protect brain cells from the damage that causes Parkinson’s, dementia, and Alzheimer’s. And the antioxidants in coffee could help prevent liver disease.
While Caffeine does not do the body good,Yes we may get our quick fixes from it but; the caffeine causes more damage then what our eyes can't see. Let's talk about people who have Osteoporosis, the caffeine is causing more harm to their bone's then anything. So, You want to strengthen those bone's then weakening them.
Coffee is said to have good benefits to but, what are they? I will cover those in the bottom line.
Feeling shorten of breathe (B.K.A - Asthma), drinking coffee with no sugar or honey- just opt out all sweetener for better relief; now this works for some (may not work for all)- like myself. The cause behind this may cause Jitteriest,as it's just a short fixes and does nothing for a long term relief.
As for some, coffee has became the brains nicotine and can be quite hard to break away. While there are study's that have shown that it does boost your brain power but, how true can it be?
researcher say before a test drinking a cup of Joe; can also sharpen memory and keep you alert.
But, if it makes you too jittery, mixing the regular with decaf, or drink it with your breakfast. Just to help keep your brain power going.
As there are Myths after myths on coffee, did you know? that coffee acts as a constipation reliever, Yes this is actually true.
The looking to go on a slim trim:
Caffeine in coffee is to believe to help speed up your metabolism and fat-burning, which helps lower your risk of type 2 diabetes and obesity. And black coffee is one of the lowest-calorie drink choices around.

Lemon Pancake muffins

Why just have pancakes for breakfast when you can have them, as muffins instead.

Serves: 6

2 c. Pancake mix
1 c. milk * (Almond, Rice,Soy Milk)
2 eggs* egg substitute
1/2 stick Margarine
12 Tbsp. cream cheese with lemon juice mixed in
confectioners sugar for sprinkling
syrup (Your choice)

Directions:

1. Preheat oven to 400 degrees.

2. Generously oil the muffin pan to coat the bottom & sides of a 12-muffin tin with margarine. Make pancakes according to you're recipe you're following.

3. Filling each cup in the muffin tin half-way. Add 1 tbsp of filling to the middle of each muffin, then cover with the remaining pancake mix. Bake 20 minutes.

4. Remove from oven, place on serving dish & use a flour sifter to sprinkle with sugar. Serve with warm syrup.

Zucchini-Carrot Tots

Why settle for Tater tots when you can have a much healthier version.

Serves: 3 (Makes: 4 Tots)

Non-stick cooking oil
1 pkg. c. Zucchini, grated
1 egg* egg substitute
1/4 med onion, minced
1/4 med carrots, grated
1/4 c. breadcrumbs
1/4 tsp. Course Himalayan Salt
1/4 tsp. freshly cracked pepper
1/4 tsp. garlic powder

Directions:

1. Preheat oven to 400 F.

2. Using non-stick cooking spray, and spray baking sheet.

3. Grate the zucchini, carrots into a clean dish towel until 1 pkg c. Wringing out all the excess water out from the zucchini, discard excess water from zucchini, in a medium bowl, blend in pepper, Salt, garlic.

4. Spoon about 1 Tbsp. of mixture in your hands and roll into small ovals. Place mixture onto the cookie sheet and bake for 16 to 18 minutes, turning Zucchini -carrot tots halfway though cooking until golden.

Living Better Suggestion:
* If you want a more cheesy taste add 1/4 c. (cheese of you're choice) As you can also use vegan cheese with theses.

Mediterranean Paella

Lets step out of our comfort zone and into a more uptown feel. This dish is quick and easy to make without the worries of reading the back of a box.

Serves: 4

3 Tbsp. olive oil
1 medium onion, chopped
2 Tbsp. fresh minced garlic
1 tsp. dried chili pepper flakes ( to taste)
1 small red bell pepper, seeded and chopped
1 c. frozen artichoke heart, thawed (or use canned drained)
3⁄4 c. sliced pitted olive (green or black)
1 (14 oz.) can chicken broth
1 c. water (or use 1 c. chicken or vegetable broth with the a 14-ounce can)
1 c. uncooked long-grain brown rice
1 tsp. Course Himalayan salt (to taste)
1⁄2 tsp. paprika
1/2 tsp. old bay seasoning
1 pinch saffron thread
black pepper
2 c. cooked extra lean turkey, chopped
3⁄4 cup fresh green pea
1 c.Stew tomatoes
Directions:
1. In a large skillet over medium heat add oil.
2. Add in onions, garlic, bell pepper and chili flakes saute for about 3 minutes.
3. Add in artichokes and olives; cook, stirring for 2 minutes.
Add in broth and water; bring to a boil.
4.Add in the uncooked rice, salt and paprika; mix well, then add in saffron; season with black pepper cover and simmer over medium-low heat for about 15 minutes.
5.Add in the cooked turkey and peas, Tomatoes; mix to combine; cover and cook for another 5-7 minutes, or until the liquid is absorbed and the rice is tender and the peas are cooked through.
6.Season with salt and pepper
7.Remove from the heat; let stand for 5 minutes, then fluff with a fork.
*Note: feel like going seafood tonight substitute the chicken and make it a clam/ shrimp/or even better "Lobster" ..... Just run with it on a budget.

Money Saving tip Tuesday....Plastic Wrap

I will be bring you different Money saving tip's daily on saving cash in your wallet, every Tuesday. Well this week I am bring you an "Awesome saving" on Plastic wrap. Have you ever tried placing you're food items into the freezer and notice that "Oh hot biscuits" the plastic wrap just won't act right.
Well I have the quick and easy money solution just for you, all it takes is for you to continue on reading and you will have the key to getting unstuck with that nagging Plastic wrap.
Unstick plastic wrap in the freezer:
Plastic Wrap loses it's static cling when placed in the freezer. It will attach to any bowl or plate that needs covering, but if you place you're food with Aluminum foil with plastic wrap then you're safe to go. First you want to: roll out your foil then place the plastic wrap over the foil, place you're food you want to save on the plastic wrap and wrap it up together.
Freezing meat in small potions with chopsticks:
Either you brought extra meat or made your own burgers, and you need extra storage place to store them. All it takes is just, an extra 10 minutes it takes to thaw ground meat in the microwave is time you could have spent doing something else. Eliminate it by pressing a chopstick into the meat on the outside of a zip top bag. It will allow you to break off as much as you need without thawing the entire amount.

Welcome to the first edition of Hot Out of the Oven for the November Edition. I hope everything is going well for you all, as I am hanging in there doing what I need to do to get Better.
Within this edition as you can see I will be sharing some good information about health benefits on eating Bananas. Eating fruits in general is very beneficial to each and everyone health, as we may sit and frown over the taste of eating particular fruit's. These fruit's are doing what is best in our favor regardless of what we don't want to eat.
So lets get started on talking about the benefits of this natures natural fruit.This truth about bananas may hit you as a shocker, as it is set to be true that Bananas are believed to be botanically a berry. As they are produced by several kinds of large herbaceous flowering plants in the genus Musa. As In some countries, bananas used in for cooking may be called plantains. The fruit is variable in size, color and firmness, but is usually elongated and curved, with soft flesh rich in starch covered with a rind which may be green, yellow, red, purple, or brown when ripen.
Bananas are high in "potassium and pectin, which is a form of fiber " They can also be a good way to get magnesium and vitamins C and B6. "Bananas are high in antioxidants, which can provide protection from free radicals, which we come into contact with every day, from the sunlight to the lotion you put on we put on our skin".
Heart health:
Bananas are good for your heart. They are packed with potassium, a mineral electrolyte that keeps electricity flowing throughout your body, which is required to keep your heart beating. Bananas' high potassium and low sodium content may also help protect your cardiovascular system against high blood pressure, according to the FDA.
Depression plus Mood changes:
Bananas can be helpful in overcoming depression "due to high levels of tryptophan, which the body converts to serotonin, the mood-elevating brain neurotransmitter," Flores said. Plus, vitamin B6 can help you sleep well, and magnesium helps to relax muscles.
Digestion and Weight loss:
Bananas are high in fiber, which can help keep you regular. One banana can provide nearly 10 percent of your daily fiber requirement. Vitamin B6 can also help protect against type 2 diabetes and aid in weight loss, according to Flores. In general, bananas are a great weight loss food because they taste sweet and are filling, which helps curb cravings. They also help sustain blood sugar levels during workouts.
Vision:
As carrots may get all the glory for helping your eyes, but bananas do their share as well. The fruits contain a small but significant amount of vitamin A, which is essential for protecting your eyes, maintaining normal vision and improving vision at night, Bananas have vitamin A which contains compounds that preserve the membranes around your eyes and are an element in the proteins that bring light to your corneas. Like other fruits, bananas can help prevent macular degeneration, an incurable condition, which blurs central vision.
Bone Health:
Bananas may not be overflowing with calcium, but they are still helpful in keeping bones strong. Bananas contain an abundance of fructooligosaccharides. These are nondigestive carbohydrates that encourage digestive-friendly priobotics and enhance the body's ability to absorb calcium.
Cancer:
Bananas may be protective against kidney cancer. in a 2005 Swedish study found that women who ate more than 75 servings of fruits and vegetables cut their risk of kidney cancer by 40 percent, and that bananas were especially effective. Women eating four to six bananas a week halved their risk of developing kidney cancer. Bananas may be helpful in preventing kidney cancer because of their high levels of antioxidant phenolic compounds.
Health Risk:
Eating bananas in moderation, there are no significant side effects associated with eating bananas. However, eating the fruits in excess may trigger headaches and sleepiness, the amino acids in bananas that dilate blood vessels." Overripe bananas contain more of these amino acids than other bananas. "Bananas can also contribute to sleepiness when eating bananas in excess due to the high amount of tryptophan found in them," Magnesium also relaxes the muscles — another sometimes-benefit, sometimes-risk.
Bananas are a sugary fruit, so eating too many and not maintaining proper dental hygiene practices can lead to tooth decay. They also do not contain enough fat or protein to be a healthy meal on their own, or an effective post-workout snack.
Eating bananas becomes significantly risky only if you eat too many. The USDA recommends that adults eat about two cups of fruit a day, or about two bananas. If you eat dozens of bananas every day, there may be a risk of excessively high vitamin and mineral levels.
While the University of Maryland Medical Center reported that potassium over consumption can lead to hyperkalemia, which is characterized by muscle weakness, temporary paralysis and an irregular heartbeat. It can have serious consequences, but you would have to eat about 43 bananas in a short time for any symptoms of hyperkalemia to occur.
Consuming more than 500 milligrams of vitamin B6 daily can possibly lead to nerve damage in the arms and legs. You would have to eat thousands of bananas to reach that level of vitamin B6.
