Summer Challenge...Under 5 dollar




* Note: Living Better Cafe would love to receive challenges, from you. So, all the other follower can see what, Katrina, has created with the ingredients that you have pulled straight from your kitchen. So, let's make this challenge happen that, way Living Better Cafe, can have a "Food Challenge Show" to present to everyone. Why this challenge can not start without you!

Living Better Cafe and the creator, I Katrina Smith are super excited to start, the summer off with a Challenge. So, if you have always wanted to put someone through a challenge, then here is your chances. Therefore, Living Better Cafe wants you to give, Katrina a challenge, and from the items that you have selected from your Refrigerator, Pantry or your kitchen cabinet, Katrina will then wrap her mind around those items, and come up with a dish, and will post it on Thursday for the Food Challenge show. Why here is your time to go run crazy in your kitchen to see, if you can pull out some items. So on your march get set GO!

Living Better Cafe is going to Trick or Treat Town. Who's coming along? I know a person who is, and her name is Katrina Smith.


As you know Halloween is just around the corner, and it a great holiday to save on candy and costumes. Why Living Better Cafe believes adult's can go Trick or Treating too. So, I Katrina Smith is here to give you an adaption of my school "Halloween on a Budget"

*Reminder: Parents remember to scan over your children candy before they partake in it.

1. Don't spend more when you can spend less: Getting your candy and decorations worth at the Dollar store.

2. Don't be so quick to grab for the big size pumpkins: Yes we all tend to grab for the Bigger size pumpkin. why not pick the smaller sizes.

3. Who said Trick or treating is just for children. Living Better Cafe say's never allow that inner child go. So, parent's while your out there with your children. Why don't you have some fun to.

Orange zucchini pancakes




Serves: 8

3/4 c. Milk

1 c. Flour
2 Tbsp. Sugar
1 tsp. Baking powder
 1/2 tsp. Baking soda
 1/2 tsp. Salt
1 egg
 2 Tbsp. Butter, melted
 2- 4 c. Grated zucchini
 1/4 c. Orange juice
      Oil 

 Directions:


1. In a large mixing bowl, beat egg, zucchini, and blend well using a whisk. Add flour, sugar, salt, and butter, orange juice and blend well.

 Add baking powder, and baking soda and blend with a wooden spoon.

2. Spoon batter onto a hot griddle pan, and cook until you bubbles form on the side . Then flip the pancake over, and cook until completed.

Double deckker cheese sandwich







Serves: 4

12 slices of French bread

1 slice of Goat cheese
1 slice of pepper jack cheese
1 lg onion, sliced
1 bag spinach
1 jar Basil pesto
1 red pepper
1 jar of sun dried tomatoes
Olive oil (for toasting)

 Directions:


 1. Lightly coat the pan with olive.


2. Then place the bread on pan, and allow to get toasted on both sides.


3. Then sauté the onions, red pepper.


4. Then assemble the deckker sandwich.

Trail Mix




Serves: 6


1/2 c. Cashews

1/4 c. Peanuts
1/4 c. Almonds
1/2 c. Raisins
 1/2 c.  Unsalted sunflower seeds
 3 3/4 c. Popcorn
 1/4 c. Wasabi peas
 1/2 c. Japanese rice crackers

 Directions:


1. Mix it all together.

Blueberry cobbler pizza







(Adapted & inspired by: Guy Fieri - Guy Fieri food)


*if you have peanut allergies omit

Serves: 8-12


1 c. Quick rolled oats

2 Tbsp. Organic brown sugar, firmly packed
2 Tbsp. Unsalted butter, at room temperature
2 pinches of Himalayan salt
1/4 tsp. Ground cinnamon
1 10-oz. Pizza dough
1 21-oz. Blueberry pie filling
1/4 c. Freshly chopped peanuts *
1/2 c. Mascarpone cheese, at room temperature

 Directions:


1.) Preheat oven to 400.

2.) In a medium sized bowl, combine oats, brown sugar, butter, 2 pinches of salt, plus the cinnamon and mix with fingers until blended combined well. Add the peanuts and mix gently.


 3.) Stretch half the dough into 1/2 inch thick 11 inch round. Place onto a greased pizza pan.


4.) Spread half blueberry filling over the pizza crust. Top with the half of the oat mixture. Bake for 30 minutes or until the crust is golden brown, and the blueberries are bubbling.


 5.) Garnish the pizza with a dollops of half of the Mascarpone cheese. 


6.) Cut pizza into slices and enjoy!

Black cherry oatmeal






 Serves: 4

2 c. Oats

4c. Water
2 c. Black cherries (removing pit)
Coconut sugar

Directions:

 Boil water, and stir in oats.
Cook about 1 minute over medium heat; stir occasionally.
 Add sugar to your liking but not to much, Enjoy!

cream of Split peas soup





*omit if allergic
 * * omit if vegan/ vegetarian

Serves: 12


1 lg onion, chopped *

2 celery, chopped & sliced
1 lb. Split peas
2 qt. Water
2 medium sweet potatoes
2 c. Diced turkey bacon**
2 tsp. Salt
1 bay leaf
 1/4 tsp. Pepper
1/4 tsp. Red pepper flakes
 1 c. Heavy whipping cream**
Sour cream ( garnish)**

Directions:

 In a soup pot, cook turkey bacon over medium heat until tender. Add onion and celery. Sauté vegetables until tender; drain. Add the peas, water, potatoes, turkey, salt, bay leaf and peppers.  Bring to a boil reduce heat; cover and simmer for 30- 45 minutes or until peas are close to puréed. Wait until slightly cool, add in cream heat through on low temperature. Garnish with sour cream.
