Betcha dollar zucchini - spinach burger



Serves: 6 

1 medium zucchini, grated

2 bunches spinach, chopped
1 garlic clove, minced
1/2 medium red bell pepper, seeded and chopped
1/2 cup chopped onion
3/4 cup breadcrumbs
1- 2 Tbsp chopped red pepper chilli
1/2 tsp salt, to taste
Freshly ground black pepper, to taste
2 eggs, beaten
1 1/2 vegetable oil

 Direction:

Cook and drain spinach, satuèe the garlic, bell pepper, onions. Before mixing with all the other ingredients.
 Heat a large skillet over medium- high heat, and add 1 1/2 vegetable oil. Cook the burgers about 3 mins per side or until golden brown.
