Banana-coconut butter



When you taste this recipe you will not go back to, eating Peanut butter again.

Serves: varies

4 oz. Margarine
3 eggs, beaten
4 lg. Bananas
1 1/4 c. Pure cane sugar
1 1/4 c. Shredded coconut flakes
2 Tbsp. Lemon juice

Directions:

1. Cream together margarine and sugar.

2. In medium size mixing bowl add in eggs, lemon juice, coconut, and mashed bananas.

3. Combine together well in a metal mixing bowl.

4. Place the mixing bowl in a saucepan of water on the stove, over medium heat. Stir until mixture becomes thick.

You can say good ridden to PB, and Hello to Banana-coconut butter.

* spiff up a sandwich. Like, opting out peanut butter.
* Jazz up any dessert. Like, cakes, donuts and ect.

Reuben Macaroni and cheese

If you love Reuben sandwiches why not enjoy it with a twist.

Serves: 5

2 slices rye bread, torn
3 Tbsp. -1 tsp. panko bread crumbs
5/8 (16 oz.) pkg. Macaroni noodles
1 Tbsp. - 2-1/2 tsp. margarine
1/2 c. - 2 Tbsp. chopped onion
1/2 tsp. Course Himalayan salt
1/4 tsp. ground black pepper
2 Tbsp. -1-1/2 tsp. spicy brown mustard
1 Tbsp. - 2-1/2 tsp. all-purpose flour
3 c. hot milk
1-3/4 c. - 2 Tbsp. shredded Swiss cheese, or more to taste - divided
3/4 c. 3 Tbsp. sauerkraut, drained (reserve juice)
5 oz. deli sliced corn beef
5 oz. deli sliced turkey
1 Tbsp. - 2-1/2 teaspoons Margarine, melted

Directions

1. Preheat oven to 350. Place margarine in a 2-qt glass casserole dish.

2. Place torn rye bread into a blender and pulse several times to make crumbs; combine rye crumbs with panko crumbs in a bowl and set aside.

3. Bring a large dutch oven pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain noodles and set aside.

4. Melt 2 Tbsp. Margarine in a large saucepan over medium heat; cook and stir onion until lightly browned, about for 15 minutes. Season with salt and black pepper; stir in spicy mustard. Remove from heat, stir in flour until smooth, and gradually whisk in milk. Sauce will thicken. Whisk 1 3/4 c. Swiss cheese into the sauce, stirring until the cheese has melted and the sauce is smooth. Stir sauerkraut with about 1 tablespoon of reserved juice and corned beef, turkey into the cheese sauce.

5. Transfer cooked noodles to the prepared casserole dish and pour in the sauce; stir to combine. Sprinkle remaining Swiss cheese in an even layer over the top.

6. Bake in the preheated oven until bubbling, about for 20 minutes. Remove casserole from oven and set the oven to broil.

7. Stir 3 tablespoons melted margarine into the reserved rye and panko crumbs until thoroughly combined and sprinkle top of casserole with rye crumb mixture. Return to oven and broil until the crumbs are golden brown, about for 2 more minutes. Keep a close eye on it to prevent dish from burning.

Storage, Storage, Storage:

1. You are out doing grocery shopping and looking for a proper place to, store you're grocery into you're car why not place them into you're non usable laundry basket. (Hint: So you don't get mixed up the next time you're out, doing Laundry grab a permanent marker, or a label and write the word "Grocery's on all sides).
Party time:

2. You don't have a cooler and you are looking to save more money without going out, and spending more money why not grab a laundry basket. Line you're laundry basket with trash bag's and full it up with ice.
Recycle bin:

3. You don't want to clutter you're kitchen counter with you're recyclable material, why not place a laundry basket next to you're garbage can and line it with a trash bag. (Hint: any size laundry basket will work, this is up to you).

Blueberry Sailor French Toast



Serves:4

4 slices cinnamon roll bread
1/4 c. Milk* (Dairy free Milk)
1 egg * (egg substitute)
1 tsp. Pure vanilla extract
Blueberry cream cheese spread- (recipe is down below)

Directions:

1. Beat egg, vanilla and cinnamon in shallow glass bowl. Pour in milk and stir.

2. Dip bread in egg mixture, turning to coat both sides evenly.

3. Cook bread slices on lightly greased nonstick griddle or skillet on medium heat until browned on both sides.

4. spread Blueberry cream cheese spread on, french toast while is's semi hot. If you desire pour syrup over top.

Blueberry cream cheese spread

Serves: 16

1/2 c. blueberry pie filling
1 (8 oz.) pkg. cream cheese, softened

Directions:

1. Drain some of the liquid out from the blueberries, place blueberries into a small glass mixing bowl.

2. In a large mixing bowl beat cream cheese with an electric mixer on medium speed until nearly smooth. Stir in drained berries, and blend until completely combined.

Spinach Pie Pizza



If you have had "Spinach Pie" You would Love! creating this original dish into a Pizza, Why not make it a Spinach Vegan Style Pizza and; you don't even have to GO Vegan to enjoy it.

Serves: 6

2 cans pizza dough
1 1/4 large onion
1 1/4 large bell pepper
2 1/2 Clove garlic, minced
1 c. - 3 Tbsp. crumbled Vegan tofu feta cheese
1/2 c. - 1 Tbsp. - 2 tsp. Cashew ricotta cheese
1/2 of egg replacer
2 1/2 lb. Spinach, rinsed and chopped

Directions:

1. Preheat oven to 400. Lightly oil a pizza pan.

2. Cook and drain spinach.

3. saute onion, garlic,and bell peppers until soft and lightly browned. Stir in spinach and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.

4. In a medium bowl, blend together egg, ricotta, and feta. Stir in spinach mixture.

5. Put spinach mixture onto pizza dough.

6. Bake in preheated oven until cheese is melted and bubbly, about 15 minutes.

Chocolate chip Banana Bread



Serves: Makes 1 loaf

3-4 Ripe banana's, smashed
1 c. Semi-sweet chocolate chip
1 1/2 c. All-Purpose Flour
1/3 c. Margarine, melted
1 c. Pure cane sugar (you can easily reduce it if needed)
1 Egg, beaten
1 tsp. Baking soda
Pinch of Himalayan salt

Directions:

1. Preheat the oven to 350. Using a wooden spoon, blend together Margarine and smashed bananas. Into a large glass mixing bowl.

2. Blend together sugar, eggs, vanilla, chocolate chips. Sprinkle the baking soda and salt over the mixture and mix in the flour at the last, pour mixture into a greased 4x8 loaf pan.

3. Bake for 1 hour cool on a rack. remove from the pan and slice to serve.

Oven Baked Banana Chips

Serves: 4 to 6

2-3 ripe Bananas
Lemon juice or Lime Juice
pinch of Himalayan salt
Pinch of fruit seasoning (it's a Mexican spice you find in you're grocery store).

Note:
If you can not find this fruit seasoning, please ask for assistance's.

Directions:

1. Preheat oven to 225˚ F.

2. Slice the bananas into 1/8" slices and layout in a single layer on a baking tray covered with parchment paper. Brush with lemon or, lime juice, adding the salt and fruit seasoning.

3. Bake until bananas have dried out, for about 2-3 hours.make sure to check bananas after about 90 minutes and peel up from the parchment paper so, to help air circulate a bit better (Be careful when removing the parchment paper).

4. Remove from oven and let cool for another 30-60 minutes (banana chips with crisp more as they cool.) If you remove the banana chips too soon and they do not start to crisp after about 5 minutes of being out of the oven, you need to return them back to the oven for another 15 to 20 minutes.

I will be bring you different Money saving tip's daily on saving cash in your wallet, every Tuesday. This week on Money saving tip's Living Better Cafe wants to, help you save more cash in your wallet than ever before. This week I will be giving you tip's on Never having to say good ridden's to bananas.
Bananas are first packed with lot's of protein to begin with so, why waste your vitamins when you should be taking them. Here down below are some good tip's to keeping those berries around longer.

1. Freezes dried (you will need a food dehydrator, or you can use your oven)- want to know how to freeze dried bananas "Oven Style" continue to stick around because this recipe will be coming soon.

2. Power up your beverage (smoothies that is) just by, loading it up with wheat grass or, even better (not saying wheat grass is not healthy) but you see where I am heading. ah ah Chia seed's or even flax seed's.

3. Who can not forget about the heavenly sent of fresh baked "Banana bread", I know I sure can not and you can't as well (I hope).

4. You can even create you're own Banana butter, yeah! there more than Mr. Peanut around to spread on your bread to make PB & J. - looking for banana butter recipe, do not worry (this recipe will be coming soon).

5. You might find this strange but, why not place them into your freezer. Place chopped bananas into a zip lock bag, and be sure to label the bag with the date. When storing them into the zip lock bag make sure to draw out as much air as, possible. They can only last in you're freezer for about three to four months.

6. You can even make banana pop's.
See there are so, many thing's you can do with Banana's before you Ape's over tossing them out.

Sugar cookie pancakes

Perfect breakfast for Christmas, as little children are sure to love.

Serves: 8

1 1/2 c. all purpose flour
1 c. sugar cookie mix
1/2 Tbsp. Pure cane sugar
1/4 tsp. Course Himalayan salt
1 tsp. Baking powder
1/4 tsp. Baking soda
1 c. half and half
3/4 c. milk * (Almond, Soy, Rice Milk)
2 Tbsp. melted margarine
2 eggs* Egg substitute
1 tsp. Pure vanilla extract
1/4 c. sprinkles

Directions:

1. Blend together the dry ingredients in a medium mixing bowl and then set aside.

2. Combine the eggs, milk, half and half, melted margarine and vanilla in a small mixing bowl. Blend well.

3. Pour the liquid mix into the dry ingredients and combine well. The batter will be slightly lumpy but be sure to mix out any clumps! Stir in the sprinkles.

4. Heat a dutch oven griddle over medium heat and spray with non-stick spray. Cook each pancake for 3-4 mins on each side over a medium-low heat.

5. Serve with sundae sauce, and enjoy!

Vegan Zucchini Gyros

Serves: 4
2 Zucchini, cubed (about 4 cups uncooked, it will shrink down when veggie cooked)
1 tbsp. oil
2 tbsp. za'atar
1 tsp. oregano
Course Himalayan Salt (To Taste)
Ground Black Pepper (To Taste)
1 lg. Tomato, sliced
1/2 C. Red onions, very thinly sliced
2 Tbsp. Red wine vinegar
1/4 C. Cucumber, thinly sliced
1/3 C. Fresh Parsley, chopped
4 pita flat breads
Directions:
1. Place the Zucchini in a large bowl and rub with olive oil, za'atar seasoning and oregano until well coated.
2. You can either roast or use the skillet cooking method, ( you're choice's both method's work!)
3.The roasting method: Place the Zucchini in a baking dish and roast at 400 degrees for 30 minutes until Zucchini is very soft.
4. The sauteing method : heat a bit more oil in a large dutch oven skillet over medium heat. Add Zucchini and cook for 10-15 minutes until very tender.
5. Blend together thinly sliced onion and vinegar in a bowl. Allow the mixture flavors to become Happy. Set aside while making the Tzatziki Sauce. Drain and excess liquid from the Zucchini before serving.

Tzatziki Sauce:
Serves: 4
1 (8 oz.) plain Soy yogurt
1 cucumber, peeled, seeded and diced
1/4 lemon, juiced
1 Tbsp. Olive oil
1 1/2 cloves garlic, minced
1 1/2 tsp. fresh dill, chopped
course Himalayan salt (To taste)
Cayenne Pepper (To taste)
Tzatziki Directions:
1. In a food processor, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.

Three Ingredient Chocolate Chip cookies



Serves: Makes one dozen 3-in cookies

2 c. Almond Butter
1 c. semi- sweet chocolate chip's
1 egg's

Directions:

1. Preheat the oven to 350° and line 2 baking sheets with parchment paper. In a medium sized glass mixing bowl add the almond butter, egg, chocolate chip. Using an electric mixer, beat the mixture at low speed until smooth.

2. Form the cookie dough into 12 balls and arrange them on the prepared baking sheets. Flatten the balls with the tines of a fork to 3-inch rounds. Bake one sheet at a time in the center of the oven for about 15 minutes, until the cookies are lightly browned around the edges. Let the cookies cool completely on the baking sheets.

Note:
You can use. For example, Cashew butter or Peanut Butter if you do not like almond butter.

Lion Head Soup

Lion Head is a dish from the Huaiyang cuisine of eastern China, consisting of large meatballs (about 7–10 cm in diameter) stewed with vegetables. This dish taste quite delicious as my mother has made this dish before. this isn't her recipe but, I have found this dish on a different site and have adapted it.

Dumplings

serves: 4

2/3 c.All-purpose flour
1 1/4 tsp. Baking powder
3/4 tsp. Pure cane sugar
1/4 tsp. Course Himalayan Salt
2 tsp. Margarine
1/3 c. Milk* (Rice, Soy, Almond Milk)

Directions:

1. Blend together flour, baking powder, sugar, and salt in medium glass bowl. Cut in margarine until crumbly. Stir in milk to make a soft dough (you do not want mushy).

Lion Head Soup Based

Serves: 4

1 lb. Lean ground turkey
1 egg
1 Tbsp. Cornstarch
2 tsp. Sesame seed oil
1 Tbsp. Freshly minced ginger
1 tsp. Course Himalayan Salt
2 Scallions, chopped
1 Tbsp. Vegetable oil
1 Head Napa cabbage, cored and cut into chunks
2 c. Low- fat or low -sodium broth (you're choices)
2 c. Water, or as needed
1 Tbsp. Soy sauce
Dumplings

Directions:

1. combine the ground turkey, egg, cornstarch, 2 teaspoons of sesame oil, ginger, salt, and half of the chopped scallions together in a bowl. Using your hands to mix until the ingredients are evenly distributed. then Set aside.

2. Heat the oil in a wok over high heat. When the oil is hot, fry the cabbage, stirring constantly, until cabbage begins to wilt, for about 2 to 3 minutes. Pour in the broth, water, and soy sauce. Bring to a boil, then lower the heat down to medium.

3. Use a ice cream scooper to form the meatball mixture into 1 inch balls. Drop meatball and dumplings into the boiling soup. When the last ball has been added, cover with a lid and simmer for 10 minutes. Taste, and adjust salt before serving. Garnish with remaining scallions and a drizzle of sesame oil.

Note: When placing the dumpling's into the soup, cover and simmer for about 15 minutes without the lid; before adding the meatballs.

Zucchini- bacon cheese bread




Move over regular breakfast bread there's a new bread in town.

Serves: Makes 2 loaves

3 c. All -purpose flour
1 tsp. Course Himalayan Salt
1 tsp. Baking soda
1 1/2 tsp. Ground Cinnamon
1/2 tsp. Baking powder
3 eggs, beaten
2 c. Pure cane sugar
2 tsp. Vanilla extract
1 c. Vegetable oil
3 c. Grated Zucchini
2 c. Grated cheese (cheese of your choice)
1 lb. bacon, crisp fried, crumbled*(Use vegetarian Bacon if you're vegetarian)

Directions:

1. Preheat oven to 350.

2. Cook bacon in skillet until light brown; drain

3. Combine flour, salt, baking soda, cinnamon and baking powder together. Combine eggs, sugar, vanilla and oil in mixer bowl; mixing until smooth.

4. Stir in zucchini and crumbled bacon. Add the dry ingredients, mix well. Fold in grated cheese. Spread batter in two well greased and floured 5 x 9 in loaf pans.

5. Bake for 50 to 60 minutes or until loaf test done. (Hint: using a toothpick inserted into the center, if comes out clean "DONE"). Remove to cooling rack to cool. Cut and serve.

Pumpkin cupcakes



These cupcake's are super moist, you're going to want more then just one.

Serves: 12

1 c. Margarine
2 c. pure cane sugar
4 egg's, leave at room temperature
2 1/2 c. self- rising flour
1 c. Milk or Water
1 tsp. Vanilla extract
1 (15.oz.) can pumpkin or Pumpkin puree
1 tsp. Ground cinnamon
1/2 tsp.Ground nutmeg
1/4 tsp. Ground Clove

Directions:

1. Preheat oven to 350. Grease and a 12 c. muffin pan or line with paper liners.

2. In a large bowl, cream together the margarine and sugar. Beat in the eggs, one at a time. Combine the milk and vanilla, pumpkin, cinnamon,nutmeg,clove, and alternately to the creamed mixture with the flour, ending with the flour. Mix only as much as necessary. Pour into the prepared muffin cups.

3. Bake for 20 to 25 minutes in a preheated oven, until a toothpick inserted in center comes out clean.

Money Saving tip Tuesday....Slow cooker

Welcome to another edition of Money Saving tips.
In this edition I will be sharing some cool tips that won't break your bank, and will keep you smiling from ear to ear all the time.
Once again thank you for sticking around, for this First edition of Money saving tips for this December edition. I will be bring you different Money saving tip's daily on saving cash in your wallet, every Tuesday.
When it comes to eating healthier, but planning,shopping, and prepping these wholesome meals can be quite overwhelming, and get old really fast. So, who has the time and money to buy expensive ingredients and cook a full meal everyday? So, I am here to lead you a helping hand.
You're Slow cooker can save you a lot of money in the long run, which you will learn as you, continue to read as you go along.

1. Manage your time.

You do not want to come home after work long hours, and then come home to cooking for your family, or yourself. Prep the slow cooker in the morning, turn it on, and have a hot dinner waiting for you at the end of the day. Starting dinner early equals early bedtime and who doe not want that? I know I would enjoy that.

2. Going dry beans rather then canned

You're slow cooker is great for cooking dry beans- just soak them overnight in water (using baking soda), drain in the morning, add other ingredients, and flip the on switch. Dried beans tend to be inexpensive than Mr./ Mrs. can beans.

3. Energy saver

You're slow cooker actually uses less energy than Mr. stove range or oven.

4. Creating your own stock

Making your own stock is much easier than going store brought, especially when you have a slow cooker.

5. Thinking outside the box

Yes, your slow cooker is great for preparing breakfast to, and not just for making dinner or for those gatherings. (Hint: just prep what you're planing to have at night).

6. Cooking in bulk

Yes, buying your food in bulk is great to but; preparing all your meals at once is good to. After all the cooking is done allow to cool, and prep you're container or freezer bags for these meal's, and store them in the freezer or refrigerator. (Hint: if your planing to enjoy the next day, place one in the refrigerator).
