Breakfast Horizon







Serves:1 Kitchen time: 2 hours

3 Tbsp. Chia Seeds
1 C. Water
2 C. Brewed tea (I used Black tea. But, any flavor of tea will work.)
1/2 tsp. Coconut sugar
Chia sprouts (garnish- optional)

Direction:

1. Add Chia Seeds to 1 c. water, mix well and refrigerate for 1 hour.

2. Remove Chia Seeds from refrigerator, and add Chia mixture to: 2 c. brewed tea, 1/2 c. Coconut sugar. Mix well and refrigerate for another hour.

Kick In The Gut Smoothie

Living Better Cafe, has been on fire this summer... Katrina love's drinking smoothies. And she knows, you would love it too.
Serves: 1-2 (depending on cup size)

1 C. Spinach
2 Tbsp. Chia seeds
1 C.Milk *you can use milk alternative. Like, almond, Soy, Rice.
1 C. Water
1 Banana (I used a spotted banana)

Direction:

1. In a small bowl, add Chia seeds with a little bit of water. Stir and allow to seat for ten minutes, until seeds become jellified.

2.After ten minutes has pass, add in the rest of your ingredients, blender and press on the smoothie button, until well incorporate.

Cranberry and Spice Oatmeal




What better way to fuel your brain, and lower your cholesterol? By fixing yourself a Hardy bowl of: Cranberry and Spice Oatmeal. Its loaded with a lot of 💓 healthy essential, your body will love.

Serve: 1

1/2 c. Old fashioned Oats

1 pinch course Himalayan salt

1/2 c. Whole Cranberries

1 1/2 tsp. Sugar ( you can use sugar substitute)

1/4 tsp. All spice

Directions:

1. Bring 1 c. Water to a boil.

2. Add oats, salt, all spice, sugar and cranberries inside your bowl.

3. Once water has come to a boil, pour over your oatmeal and stir.

1 1/3 c. rolled oats - old-fashioned or quick-cooking
1/4 c. wheat germ
1/3 c. raisins
1/2 tsp. ground cinnamon
1/2 tsp. vanilla extract
2 Tbsp. and 2 tsp. sunflower seeds
2 Tbsp. honey
2 Tbsp. maple syrup
1/4 tsp. salt
1 Tbsp. and 1 tsp.brown sugar
2 Tbsp. and 2 tsp. vegetable oil
2 Tbsp. and 2 tsp. finely chopped almonds
2 tablespoons and 2 teaspoons Chia Seeds

Direction:

1. Preheat oven to 325. Lining a baking sheet with foil, or parchment paper.

2. In a medium size mixing bowl, combine together the Oats, Sunflower seeds and Chia seeds and Almonds. Stir together the brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Let mixture come to a boil over medium heat, then pour the dry mixture, and stir until coated completely. Spread the mixture out evenly on the baking sheet.

3. Bake in the oven until crispy and toasted, for about 20 minutes. Stirring once half way through the process. Allow to cool and add in the raisins.

Apricot chocolate-chip Waffles

Today Living Better Cafe is sharing with you a recipe from, Coffee Talk's blog that will have your taste buds saying Yummy to my tummy goodness. Why, the creator of Living Better Cafe has an Apricot tree in her back yard, and she is crazy about her apricot's.

Serves: 8

1 lb. fresh Apricot
1 c. all-purpose flour * GF
1 c. Coconut flour
1 c. Greek yogurt
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. Himalayan salt
3 Tbsp. Pure granulated sugar
2 c. buttermilk
1 lg egg yolk
1 Tbsp. E.V.O.O
1/4 c. pecans
3 lg egg whites

Directions:

1. Preheat waffle iron. Dice Apricot. blend together wheat flour, all-purpose flour, baking soda, baking powder and 1 Tbsp. sugar; and set aside.

2. Using a wire or hand mixer, mix together the buttermilk, egg yolk, vanilla extract, and E.V.O.O. Stir in the dry ingredients until the mixture becomes moist. Next fold in the apricots and the pecans, and chocolate chips.

3. In a small mixing bowl, beat the egg whites until they begin to form soft peaks; add in 2 Tbsp. sugar and continue to beat the egg whites until the mixture firm peaks form and they look shiny.

4. Next add in 1/4 of the egg white mixture in to the waffle mixture. Then fold in the remaining egg white in to the waffle mixture.

5. pour 2/3 c. mixture for each onto the waffle iron, and allow to cook for about four minutes.

Banana Praline Pancakes

Banana Praline Pancakes

Living Better Cafe says: Why not treat your dad, to breakfast in bed because today is a special day for him. So, show him how much you truly care about him, by treating him to a breakfast in bed. Go ahead dad's you all have earned this. So what better way to treat your "Pop's"? with this recipe of course.

Serves: 5

2 eggs
2 c. all-purpose flour, sifted
3 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 1/2 c. buttermilk
4 Tbsp. (1/2 stick) unsalted Margarine, melted
1/2 tsp. vanilla extract
1 to 2 Tbsp. E.V.O.O
1 3/4 Banana, mashed
1 cup chopped pralines, plus more for serving
Whipped cream for serving
Pancake syrup for serving

Directions:

1. In a large mixing bowl, whisk in the eggs until bubbles begin to form. Add in the flour, sugar, baking powder, baking soda, salt, buttermilk, margarine, Banana and vanilla extract and stir just until smooth; do not over beat the mixture.

2. Heat a dutch oven skillet, or fry pan over medium heat. delicately coat the pan with E.V.O.O. Pour in 1/2 batter, Topping with 1 Tbsp. Chopped Pralines. Allow to cook until bubbles begin to form at the top about two minutes, and flip over and allow two minutes more.

3. Serve with your dad's favorite syrup and top it off with Whipped cream.

Bacon-Cheddar egg white omelet

Serves: 2

2 Tbsp. E.V.O.O
1 sm. Onion
1 bell pepper (your color of choice)
4 egg whites
2 Tbsp. milk ( you can use non-dairy,such as: Almond,Rice,Soy and etc.)
3/4 tsp. Course Himalayan Salt
1/8 tsp. Ground pepper
2 oz. Cheddar cheese
4 strips lean turkey bacon (you can use vegan bacon, if you are vegetarian or vegan)

Directions:

1. Cook bacon in a dutch oven skillet over medium-high heat until crisp. Remove with a slotted spoon to paper towels to drain and cool; crumble the bacon and set aside.

2. Add 1 Tbsp. E.V.O.O in a medium skillet over medium heat. Place in the onion and bell pepper inside of the skillet. Cook for 4 to 5 minutes stirring occasionally until vegetables become tender.

3. As the vegetables are getting happy, beat in the egg whites with milk,1/2 tsp. both salt and pepper.

4. Shred Cheddar cheese in a small bowl, and set aside.

5. When the oil is hot add in the egg mixture and cook the egg for about 2 minutes or until the eggs begin to set on the bottom of the pan. Gently lift the edges of the omelet with a spatula to let the uncooked part of the eggs flow toward the edges and cook. Continue to allow the eggs to cook for 2 to 3 minutes or until the center of the omelet starts to look dry.

6. Sprinkle the crumbled bacon, Cheddar cheese in the center of the omelet. Using a spatula gently fold one edge of the omelet over the vegetables. Let the omelet cook for another two minutes or until the cheese melts.

Living Better Cafe Presents...Coffee Talk, has taken your favorite dessert "Pineapple upside down cake" and turn it in to Pineapple upside down Pancakes. Why of course, you can always omit any ingredient in this recipe, if you have in allergies, or whatever the case maybe. Therefore, Enjoy this Yummy Breakfast.


2 c. pancake mix ( You can either use store brought, or you can make your own batter).
1 1/3 c. water
1/4 c. brown sugar
1 can (20 oz.) pineapple slices, cut into fourths
1 can (20 oz.) Cherries


Preheat your pancake griddle pan, or fry pan to 375. Combine together the pancake batter and water with a wired whisk. Keep in mind that your batter will have some lumps inside of it. Pour about 1/4 c. of your batter on a preheated pan. Coffee Talk it up with just a Tbsp. of sprinkle of brown sugar, on the batter as it's on the pan. Add on Pineapple slices, with a cherry after you have finished with sprinkling with brown sugar. Cook until you begin to see bubbles to form around, the edges and
then flip over, and allow to cook for 1 to 1 1/2 minutes.

Apple Crisp Muffins

Apple Crisp Muffins

Why if you enjoy the taste of Apple Crisp, Living Better Cafe knows, will you enjoy this spin on Apple Crisp.

Serves: 12

3/4 c. Macintosh apples, peeled, cored and chopped
1 Tbsp. water
1 1/2 tsp. Stevia
1/8 tsp. Ground cinnamon
1/2 c. all-purpose flour (you can also use gluten-free flour. Especially, if your child is sensitive to gluten)
1/2 c. rolled oats (you can also use gluten-free oats)
1/4 c. and 2 Tbsp. Brown sugar
1/4 tsp. Ground cinnamon
1/4 c. and 2 Tbsp. Margarine (you can find Vegan Margarine, if you are Vegan/Vegetarian)

Directions:

1. Preheat oven to 350 degrees F. Spray muffin tin with non-stick cooking spray.

2. Mix together apples, water, white sugar, and 1/4 tsp of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from the heat.

3 .Blend together flour, oats, brown sugar, 1 tsp. of cinnamon in a large bowl; cutting the margarine into the flour mixture with a pastry cutter, or fork until the mixture looks like coarse crumbs. Place a heaping Tbsp. of the crust mixture into the muffin cups, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Making the crust go all the way to the top of the muffin cup, and patch up any holes with more crust mixture. you will have leftover crust mixture. Place about 2 tsp of apple filling in the crust. Sprinkle about 1 tsp of the remaining crust mixture on the filling.

4. Bake in the oven until golden brown, for 15 to 20 minutes, or until tooth pick has been inserted comes out clean.

5. Optional- After the muffins have been removed from the oven. sprinkle lightly with a dusting of cinnamon sugar.

1 1/2 c. Almond Flour
1/4 c. Raisins
2 tsp. Baking Powder
1/4 tsp. Course Himalayan Salt
1/4 tsp. Ground Cinnamon
1/2 c. Almond Milk
2 Egg Whites
1/2 c. Tapioca Flour

Direction:

1. Preheat your oven to 400. Mix together Almond Flour, Almond Milk.

2. In a separate mixing bowl, combine together Tapioca Flour, Raisins, Baking powder, Salt, Cinnamon, and Egg Whites.

3. Combine both wet and dry ingredients together, until completely moistened.

4. Fill up the muffin tin pan with mixture.

5. Place in the oven for 14-18 minutes, or until tested with a tooth pick, and it comes out clean.

The Unexpected B.L.T Salad

Living Better Cafe and Katrina Smith, want to serve you a breakfast salad you never thought would be possible. So, if you have heard of a B.L.T salad before. Why not take it even further, let's basically adapted the original B.L.T and add a twist to it by adding in,a few more ingredients. Like, Egg's,bell pepper's and feta cheese. It's beginning to sound good already.

Serves: 4

1 head of lettuce's
11 lb. bacon (you can use vegetarian bacon)
1 1/4 large tomatoes, chopped
1 c. Feta cheese, crumbled
2 lg. eggs
1 bell pepper, seeded and chopped (color of your choice)

Directions:

1. Place bacon in a large, dutch oven skillet. Cook over medium high heat, turning the bacon until evenly colored on both sides. Drain, crumb and set aside.

2. In a small-size sauce pan cover eggs, with cold water and bring to a boil, partially covered with lid. lowering down the heat to low and cook eggs, covered completely, 10 minutes.

3. Blend together lettuce,tomatoes,slice and chopped eggs, bell peppers, with crumbled Feta cheese. topping it off with croutons-Optional.

Breakfast Pot Pie

Serves: 8

* You can either use store brought biscuit, or you can follow this recipe down below.

Biscuit:

2 c. All-purpose self-rising flour
1 teaspoon ground black pepper
1 teaspoon kosher salt
1/2 c. Margarine, or Vegan Margarine, softened
1 c. shredded cheddar cheese
1 c. Shredded pepper Jack cheese
2 Tbsp. maple syrup
1-1/4 c. buttermilk

Breakfast filling:

1 Tbsp. vegetable oil
1/2 c.diced red bell pepper
1/2 c. diced green bell pepper
1/2 c. diced onion
1 (16 oz.) sausage
8 lg. eggs
Course Himalayan salt & Cayenne pepper to taste
1/2 c. shredded cheddar cheese

Directions:

*Note: If you have chosen to use store brought biscuit dough, do continue to follow the directions according to the container.

1. Preheat oven to 350. Lightly spray the pie plate, or pie pan with non-stick cooking oil.

2. In a large-size mixing bowl, whisk together flour, salt and pepper. You want to cut the Margarine into the dough, until the dough begins to form crumbs. Next fold the cheese until it's completely cover with the flour mixture. You want to create a well in the center of the mixture, and add in the maple syrup and buttermilk. Stir with a wooden spoon until everything is blended well.

3. Heat oil in a large-size fry pan over medium heat (I prefer a dutch oven because this pan release's iron into your food, which is safer to cook with then any other cookware.) Add in peppers, onions and allow to saute for about five minutes before adding in the sausage. Cook the sausage until it's no longer pink inside, then add in the eggs and stir until they become scrambled with the sausage mixture.Season with Salt and pepper and then add in the cheese. Now you want to transfer the mixture into the prepare pie plate, or pie pan.

4. Place a large amount of biscuit dough evenly over the sausage mixture. Bake for about 30 minute, or until the dough starts to turn golden brown.

Pumpkin-Chocolate chip Pancakes






Looking for the prefect breakfast, to spook up your Halloween? Why try these delicious pancakes.


Serves: 6

1 1/2 c. Milk (you can use non-dairy milk also. Like, Almond, Rice,Soy)

1 egg (you can use egg substitute)

1 c. Pumpkin Puree

2 Tbsp. vegetable oil

1 c. Chocolate Chips

2 c. all- purpose flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. ground all-spice

1 tsp. ground cinnamon

1/2 tsp. ground ginger

1/2 tsp. course Himalayan salt

3 Tbsp. Pure Brown sugar


Directions:

1. In a bowl, mix together the milk, pumpkin, Chocolate chips,egg and oil. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl.using a wooden spoon Stir the pumpkin mixture just enough to combine.

2. Heat a lightly oiled dutch oven griddle over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Let both sides to get brown. Top it off with whipped cream- opinonal

French Toast grilled cheese



Did someone say Ultimate at it's best? Why it's grilled cheese like you never expected.

Serves:3

2 lg. eggs
1/3 c. low-fat milk
6 slices of whole grain bread
3 slices of cream cheese
2 Tbsp. Margarine

Directions:

1. Heat up your griddle pan with 1 Tsp. Margarine.

2. In a medium size bowl mix together eggs with milk.

3. Quickly dip the bread into the egg mixture, and place onto the pan allowing to brown on one sides, you want to turn placing 1 slice of cream cheese and placing other slice of bread on top.

4. You want to flip once the bottom gets good and brown.

Chocolate-Coconut Oatmeal




This Breakfast of Champions will pack a powerful punch. The benefits of Chocolate. Which helps lower your blood pressure, and your "bad" LDL cholesterol levels. As the Benefit of Coconut helps, boost brain functioning and lower "bad" LDL cholesterol as well. Therefore, No wonder why Chocolate and Coconut work so well together.

Serves: 4- 6

1 Tbsp. Margarine
1 c. steel cut oats
1 c. Milk* (Dairy-free)
1 c. Shredded coconut
1 c. Cocoa powder
3 Tbsp. Pure cane sugar
1/2 tsp. Course Himalayan salt

Directions:

1. In a medium-sized saucepan, combine steel-cut oats and Milk, and bring to a boil. Immediately reduce heat to medium. Cover and simmer for 25 to 30 minutes or until the oats are just tender and the liquid is nearly absorbed. Add and stir in the Coconut and cocoa powder. Remove the saucepan from heat and let stand, covered for 5 minutes before serving.

Yes, once again I am bring you an inexpensive recipe that, I know will keep you and you're wallet happy. I just want to share with you that it, really all depends on where you shop for all the ingredients.

Rosemary-Garlic Cornmeal mush

Living Better Cafe give this recipe the "GOLDEN STAR", as you can taste both the rosemary and garlic.Which both has great benefits, for your health.

Serves: 2

1/2 c. Cornmeal
1 Tbsp. minced garlic
1/8 tsp. course Himalayan salt
1 1/2 c.- 2 Tbsp. Milk
1 tsp. Fresh rosemary

Directions:

1. Mix together cornmeal, Milk and salt. with Rosemary and garlic into a medium saucepan. cooking over medium-low heat, stirring frequently, just until the mixture becomes thick. Allowing to cook for about 5 to 7 minutes.

Waffle Pizza Pocket




You heard of Breakfast pizza, Why have you heard of a Waffle pizza pocket? Yes! turn you pancake's into a waffle an Enjoy a Breakfast on the Go, in a pocket.

Serves: 6 (Makes 12 in total)

2 eggs, beaten
1 1/4 c. milk *(Dairy free milk)
1 cup all purpose flour
2 Tbsp. powdered sugar
1 tsp. baking powder
1 tsp. vanilla extract
1/4 tsp. Himalayan salt
1/4 c. 2 Tbsp. Tomato sauce, divided
3/4 c. Shredded mozzarella cheese, divided
3/4 Breakfast sausage, cooked
3 3/4 eggs, scrambled
3/4 c. Frozen shredded hash browns



Directions:

1. Preheat the waffle Iron, according to manufacturer's Directions.

2. In medium sized mixing bowl, combine eggs, milk, flour, powdered sugar, baking powder, vanilla, and salt. Beat the mixture with a wire whisk until smooth. Heat a lightly greased dutch oven skillet over medium heat; remove the skillet from heat. Pour about 3 tablespoon of the batter into a waffle iron.

3. Pour mixture onto waffle iron allow to cook, according to manufacturer's directions.

4. Spoon 1 Tsp. Tomato sauce into the center, topping each waffle with 2 tsp. Shredded cheese, 2 tsp. eggs, hash browns and 2 tsp. sausage.

5. Cook until sealed around the edges, are golden brown.

6. Repeat step 3 to build another waffle, to place on top.

7. Place the top waffle on top, while it's pippin hot. So, it will melt the cheese.

Cheesecake Pancakes

When it comes to having Breakfast I am no shy cat. Stack my plate with four pancake's and pour the syrup over them. Yes! I love waking up to having Breakfast. Especially, Pancakes.

Serves: 5

1 pkg. (8 oz.) cream cheese, leave out at room temperature
2 c. Pancake mix
1/2 c. Vanilla wafer, crushed
1/4 c. Organic Pure Sugar
1 c. Milk
2 lg. Eggs


Directions:

1. Slice cream cheese into four lengthwise pieces, laying each piece of cream cheese on a cookie sheet: cover and place into freezer for eight hours.

2. using non-stick cooking spray, spray the griddle pan; and place over medium heat.

3. Cut cream cheese into bite- sized pieces; set along the side. In a large sized mixing bowl, blend pancake mix, vanilla wafers, sugar, milk and eggs with a wire whisk until Incorporated. Stir in the cream cheese.

Maple & Brown Sugar Grits





Grit's is yet another dish that is very versatile and can be made different way's. Like, Breakfast, Lunch, Dinner.

Serves: 8

1/4 c. Maple syrup
1/4 c. Organic Brown Sugar
2 c. Grits
1 tsp. Ground cinnamon
1/2 tsp. Course Himalayan Salt
7 c. Water


Directions:

1. Bring water and salt to a boil in a saucepan. Whisk in the grits and continue to whisk for 1 minute. When the mixture comes to a boil again, turn the heat to low. Stir frequently, cook for 10 to 15 minutes.

2. Remove the grits from the heat and add Maple syrup, Sugar and Cinnamon, Incorporate well and serve.

Apple-Ginger and Spice Oatmeal





Serves: 2

1 c. Water
1 Gala Apple, Cored and Diced
2/3 c. Rolled Oats
1 tsp.Fresh Ginger, grated
1 tsp. Ground Cinnamon
1 tsp. Vanilla Extract

Directions:

1. Combine the water, apples and ginger in a saucepan. Bring to a boil over high heat, and stir in the rolled oats, Vanilla extract and cinnamon. Return to a boil, then reduce heat to low, and simmer until thick, for about 3 minutes.
