Catfish burgers

Move on over Salmon and Tuna burgers, there a new burger in this town.

Serves: 5

10 oz. Catfish fillets
5/8 Medium onion,chopped
1- 1/2 c. Shredded carrots
1- 1/2 c. bell peppers, chopped
1- 1/2 c. Celery, chopped
3/4 tsp. Dijon mustard
3/4 tsp. Minced garlic
1- 3/4 tsp. Yogurt
1- 1/2 c. - 1 Tbsp. Panko bread crumbs
1/4 tsp. Old bay seasoning
5/8 Egg
1/2 c. - 2 Tbsp. Vegetable oil

Directions:

1. In a sauce pan place catfish with enough water, and cover. allow it to come to a boil, and cook until catfish starts to flake when touched. Drain off water, and mash-up the fish. Add in onion,carrots, mustard, yogurt, old bay seasoning, Panko bread crumbs, egg, celery, garlic and bell pepper. combine until incorporated well.

2. In a large dutch oven skillet heat oil over medium high heat. Form catfish mixture into burger, and fry . Drain any excess grease with a colander lined with paper towel. Serve with cucumber sauce.

Crescent bites

How much fun can you have with Crescent rolls? especially if your looking for something on the go. This recipe will hit the right spot.

Serves: 24

1-8 oz. Crescent roll dough
3 oz. Cream cheese, softened
1/4 c. Low fat plain yogurt
3/4 c. Imitation crab meat,chopped
2 Scallions, chopped
1/4 tsp. Crushed red pepper flakes
3/4 c. Shredded carrots
3/4 c. Celery, finely chopped
1/4 c. Shredded cheese (if not enough add more)
Himalayan salt & Freshly ground pepper (to taste)
egg white (Optional)

Directions:

1. Pre heat oven to 375. Spraying a baking sheet with non stick cooking spray.

2. Unroll out the crescent roll dough on a clean work surface. pinching the seams to seal and roll using a rolling-pin to build an equally balance rectangle. cut them into 6 rows by 4 rows.

3. In a small glass bowl,combine Cream cheese, Yogurt, Crab meat, Scallions, red pepper flakes, carrots, celery and cheese. Add in Salt and pepper to taste. separate crab mixture even among the squares. pick up a corner, folding the dough over the filling mixture, and tuck tightly underneath the filling. Rolling opposite corner and roll; to seal. Transfer to baking sheet. using pastry brush, brush egg whites over crescents.

4. Bake for 10 to 15 minutes, or until golden brown.

Yes, once again I am bring you an inexpensive recipe that, I know will keep you and you're wallet happy. I just want to share with you that it, really all depends on where you shop for all the ingredients.


Fruit Snack

This money-saving recipe will be great to get your little ones involve into.

Serves: 24

8 Tbsp. (1/2 c.) Fruit pectin powder
2 c. fruit juice
1/4 c. Manuka honey
1 c. defrosted frozen goji berry, Pureed


Directions:

1. In a small saucepan, add in fruit juice, honey on a low heat until warm begins to simmer. But, it's not boiling. Add in goji berry.

2. Sprinkle fruit pectin over the juice mixture and whisk, until pectin is well mixed in and the mixture is smooth. (do not pour in pectin to fast because it will be too hard to work into the mixture.)

3. Pour into mixture into a molds, and allow to refrigerator or freezer until hardened.

Welcome to Hot Out Of The Oven food news, I have yet another edition of food news coming straight from no other source but, Living Better Cafe of course. As you have read through many editions of (H.O.T.O), since I have started this food news addition. You have become wiser about what you buy,and place into your mouth. While I am very happy to continue to keep "Hot of the oven" going as much as you keep enjoy reading it every Monday. In this Third March edition I will be spilling out the facts of Brown Rice, and is it really good for your health.

You and I know that Rice has been out for some years now, and it keeps continuously growing. And If I am correct rice goes way back far back as 2500 B.C. So, definitely it has been out there before you and I was born.

Rice is one of the most significant food in the world, supplying as much as half of the daily calories for half of the world's population. And we have Asian and Thailand to thank for that because rice is so exceedingly valued over in both countries. That the word Rice translated "to eat" means "to eat rice."

The only process brown rice goes through, is the removal of the outer layer of the hull kernel. Where as to get White rice, they need to mill and polish to convert Brown rice into white rice. Which destroys the nutrients that our bodies need. Like, manganese, selenium, phosphorus, magnesium, copper, thiamine, niacin and vitamin B6.

And when talking about the nutrients that brown rice has alone. Will hopefully have you rethinking about switching over to Brown rice. Brown rice is for one a highly nutritious food. It is a whole grain that is low in calories (216 per cups) also high in fiber and gluten-free.

When it comes to health benefits of brown rice, this nutritious grain helps with a better functioning cardiovascular system. Digestive system, brain and nervous system. Brown rice is packed with antioxidants which provides relief from a range of different ailments. Like, Hypertension, unhealthy levels of cholesterol, stress, mental depression and skin disorders. The high nutritional levels content in brown rice proves effective benefits for various medical conditions. For example, cancer, Obesity, diabetes, neurodegenerative disorders and insomnia. Brown rice also has anti- depressants properties and helps with maintaining healthy bones and stronger immune system.

Now that I have covered the benefit's of brown rice, the next step would be is there any side effects to eating brown rice. The only answer to this question would be? If you are eating too much Brown rice, or rice in general you are consuming too much fiber. As with anything you eat, chose to eat in moderation.

Apple Pie filled muffins



Start your morning off with a sweet tasting of Apples and Cinnamon. And a cup of Orange juice.

Serves: 12

1 can (21 oz.) Apple Pie Filling
1 c. Coconut Sugar
2 Eggs
1 tsp. Vanilla extract
2 c. All-purpose Flour
1 tsp. Cinnamon
1 tsp. Baking powder
1 tsp. Baking soda
1/2 tsp.Course Himalayan salt
1 c. Craisins

Topping:

1/2 c. Organic brown Sugar
3 Tbsp. Coconut Sugar
1/4 c. Margarine
3 Tbsp. all - purpose flour
1 tsp. Cinnamon
Lemon zest


Directions:

1. Pre heat oven to 350.

2. In a large-sized mixing bowl place apple filling, and mix with electric mixer to separate apple pieces.

3. Add in all the other ingredients and fill muffin tins about 2/3 full.

4. Top with each muffin with crumble topping and bake for 15-20 minutes in 350 oven.

Energy bar

looking for a inexpensive way to make energy bars, this recipe will sing you a very happy tune.

serves: 8 large bars or 16 small- shaped bars

1 c. Roasted peanuts
1 c. Chia seeds
1 c. Figs
1 c. Shredded coconuts
1 c. Cacao nibs
1 c. Sesame seeds
1 c. Orange Zest

Directions:

1. Blend together all ingredients in a blender. Pulse until all ingredients are broken up,

2. Using a spatula, scrape around the edge of the blender and underneath the blade to make sure the mixture does not stick.

3. Continue to pulse for another 1-2 minutes, until all the ingredients mass together and form into a ball.

4. lay parchment paper onto a baking sheet and press mixture down with your hands. wrap and chill in the refrigerator for about 1 hour or over night.

The Guac-a-mole burger

you could not get any better than this. The Guac-a-mole burger is so tasty, it will have you wanting to come back for more.

serves: 6

Guacamole

2 Avocados, halved, peeled, and pitted
1/2 lime, juiced
1 Fresh Chipotle pepper, seeded and minced
1/2 c. Diced tomatoes
1/2 c. Freshly chopped cilantro
1/4 c. minced onions
1 1/2 c. tsp. freshly minced garlic
1/2 tsp. course Himalayan salt (to taste)
1/2 tsp. Freshly cracked pepper (to taste)

Guacamole Directions:

1. In medium-sized bowl mash avocados, with the juice of a half lime, Chipotle pepper, tomatoes, onion, garlic, salt, and pepper. set aside.

Burger

Serves: 6

1 1/2 lb. extra lean ground turkey
3/4 egg, beaten
1/2 c. - 1 Tbsp. Panko bread crumbs
2 Tbsp. 3/4 tsp. evaporated milk
1 Tbsp. - 1 1/2 tsp.Worcestershire sauce
1/8 tsp. Crushed red pepper flakes
1 1/2 tsp. Freshly minced garlic
1 Fresh Chipotle, seeded and chopped
6 slices of cheese (your choice)

Burger Directions:

1. Preheat dutch oven fry pan, or grill on high heat.

2. In a medium-sized bowl, blend together turkey, egg, bread crumbs, milk, Worcestershire sauce, crushed red pepper, garlic, and chipotle pepper. Blend together with your hands, or wooden spoon.

3. Dividing burger mixture into equal portions per serving size, and form each portion into slim burger patties, and set aside.

4. Topping half of the patties with guacamole mixture, and cheese. Then top each patty off with another patty, and pinch to seal, making sure to form a smooth edge.

5. cook for 5- 6 minutes on both sides, or until there is no sight of pink inside the burger. Remove from pan, or grill and add more cheese if desire.
