Everything monkey bread



Adapted from: All new cookbook for Diabetics & their families.

If you love Everything bagels, I bet you would go Banana's for this recipe.

Serves: 1 loaf (16 slices)

1 pkg. dry yeast
1 c. warm water (105 to 115 degree)
3 c. all purpose flour, divided
1 tsp. Himalayan salt
1 Tbsp. Margarine, Melted
1 clove garlic, minced
1 tsp. fresh parsley
1 tsp. poppy seed
1 tsp. dried onion
1/8 tsp. pepper

Directions:

1. Dissolve yeast in warm water in a large bowl; an allow to stand for about 5 minutes.

2. Blend together 1 1/2 c. flour and salt, adding to the yeast mixture, stirring well. Gradually stir in remaining 1 1/2 c. flour to make dough stiff.

3. Turn dough out onto a lightly floured surface;cover and allow to rest for 10 minutes. Knead 8 to 10 minutes, or until smooth and elastic. Place dough in a bowl coated with non-stick cooking spray, turning to grease top. cover and let rise in a warm place, free from drafts. 1 hour or until dough doubles in size.

4. Combine margarine,garlic, parsley, poppy seeds, dried onions, and pepper. Stirring well. Roll dough into 1 1/2- in size balls, and dip each into the margarine mixture. Layer balls of dough in a 10-in ring mold. ( Following step 3, on keeping away from draft) Bake at 375 for 25 to 30 minutes. Allow to cool in pan for 5 minutes; before serving.

Welcome to another edition of Money Saving tips.

Once again thank you for sticking around for, this Second edition of money-saving tips for this April edition. I will be bring you different money-saving tip's daily on saving cash in your wallet, every Tuesday. This week on money-saving tip's Living Better Cafe wants to, help you save more cash in your wallet than ever before. This week I will be giving you a Money saving recipe, yes! making delicious meals within side the comfort of your home, or wherever you maybe can also save "YOU" Money!

Yes, once again I am bring you an inexpensive recipe that, I know will keep you and you're wallet happy. I just want to share with you that it, really all depends on where you shop for all the ingredients.

This recipe happens to be one of my all- time favorite because I am a person who Love's eggs. Yes ever since I was a little kid, I would say I could eat eggs all day. This recipe is called Beefy Cheesy Omelette, and it serves only 1. As there is an **extra bonus tip at the very end of this recipe. Yes, You heard me correctly "EXTRA-BONUS"! I actually got this tip from one of my favorite television chef's Michael Symon.

Beefy Cheesy Omelette

2 lg. eggs, beaten
2 Tbsp. shredded cheese
2 tsp. Beef flavoring (Ramen seasoning packet)
2 tsp. baking powder * (add to eggs, which makes them fluffy)
1 Tbsp. Margarine *(equal parts of margarine to oil)
1 Tbsp. Oil

Directions:

1. Melt margarine and add oil in a medium sized skillet hover medium heat.

2. in a small bowl combine eggs,beef flavoring and baking powder.

3. Once the pot is good and hot, pour the eggs and allow to cook.

4. Add the cheese and flip the egg, to form an omelette.

5. Flip onto the other side. so that it cook's evenly.

I want to say that if your expense's do not allow you, to afford meat to add into this recipe. That is where you can add in that Ramen flavoring packet. So, do not frown over expensive saving, :) at inexpensive saving.

Waffle Supreme

Inspired by: Grilled Cheese

This is not like any other waffle you have ever tasted.The inspiration of a grilled cheese plus more, then you ever thought of.

Serves: 4

Waffle
1/2 (.25 oz.) Pkg. active dry yeast
2 Tbsp. Warm milk
1/4 c. Organic sugar
1 1/2 egg yolks
3/4 tsp. Course Himalayan salt
1 tsp. Vanilla exact
2 c. all- purpose flour
1 1/2 egg whites
1 1/3 c. - 1 Tbsp. warm milk
1/4 c. - 2 Tbsp. Margarine, melted and cooled to lukewarm

Waffle Directions:

1. In a small mixing bowl, dissolve yeast in a 1/4 c warm milk. allow to stand until yeast becomes creamy, for about 10 minutes.

2. In a large mixing bowl, whisk together egg yolks, 1/4 c warm milk and the melted margarine. Stirring in yeast mixture, sugar, salt and vanilla extract. Stir in the remaining 2 1/2 c. milk alternating with the flour, ending with the flour. Beat in the egg whites until they form soft peaks; folding into the batter. Cover the glass mixing bowl tightly with plastic wrap. allow to rise in a warm place until doubled in volume, for about 1 hour.

Waffle Filling
6 oz. Chorizo Sausage
1 c. shredded Monterey Jack cheese

Directions:
1. Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.
2. Waffle assembly: Add cheese and chorizo to the waffle, and top with the waffle.
3. Place waffle on a griddle pan, until the cheese melt.

Pizza "Pig in a blanket" dog




Inspired by: Pizza and Corn dogs

First I want to share with you how I became inspired by, coming up with this recipe. We all know there are two main foods everyone seems to love, and they are of course "Pizza" and "Corn dogs". As this is one of the most consumed foods topped in America. Therefore I became inspired by, both of these's foods and now I am bringing you a much healthier version of the two-(Pictures will be coming soon). * Note: you can even make this with breakfast sausage, or even vegetarian sausage.

Serves: 10

1 pkg. (16 oz.) Hot dogs
1- 3/4 (10 oz.) pkg. refrigerated biscuit dough
1/4 c. - 1 Tbsp. Tomato sauce
1/4 tsp. dried oregano
1/4 lb. Mozzarella cheese
1/8 tsp. Freshly grounded pepper
1- 3/4 Fresh basil, torn
1/8 tsp. crushed red pepper flakes





Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. roll biscuit dough out and spread tomato sauce, cheese, oregano, basil, red, and ground pepper.

3. Cut the dough into crescent style, then wrap the hot dog around to form a piggy in the blanket.

4. Bake in preheated oven until biscuits are brown, for about 10 to 15 minutes.

The better cow cacao muffins

Serves: 12 dozen

3 Eggs* (egg substitute)
2 1/2 c. Granulated sugar (I highly recommend coconut sugar)
1 1/8 c. Vegetable oil
1 1/2 c. Low fat milk * (Almond, Soy, Rice)
1 1/2 tsp. Himalayan salt
1 1/2 tsp. Baking powder
1 1/2 Tbsp. Chia seeds
1 1/2 tsp. Vanilla extract
1 1/2 tsp. Almond extract
3 c. All- purpose flour
3/4 c. Cacao Nibs

Directions:

1. Beat together the eggs, Granulated sugar and vegetable oil. Add in milk, salt, baking powder, Chia seeds , vanilla extract, almond extract, cacao Nibs and flour. Mix well.

2. line the muffin pan with paper lined muffin cups (filling only 3/4 full ) at 350 for 15-20 minutes. to test for doneness insert toothpick in the center it should come out clean.

Cacao are least processed and most natural form of chocolate. The lack of processing and sugars do give them a bit of an acquired taste as they have a distinctive bitter somewhat nutty flavor. They do however have lots of uses as you can add them into smoothies, as a topping on desserts, use in baking or even just snack. Cacao also has a very wonderful health benefits that you really didn't know about, as you begin to read them I hope your ready to give them a try.

1. Antioxidant
Cacao help fight off free radical damage in the body which can cause DNA damage, premature aging and even cancers.

2. Flavonoids
Which from plants and can be responsible for giving pigmentation and colors to being involved in UV filtration. They are so much similar to antioxidants in that they have a free radical scavenging capacity and have anti-cancer properties while other flavonoids show potential for anti HIV function. We get flavonoids from fruits, vegetables, teas, wine and a significant amount from cacao.

3. Cardiovascular
As cacao lower the rates of cardiovascular-related mortality. there's that word again "flavonoids" were actually referred to as ‘Vitamin P’ because of the effect they had on the permeability of vascular capillaries. studies has been linked here has shown that as little as 5 grams of cacao powder is sufficient to elicit significant vasodilation of the brachial artery.

4. Fiber
A huge serving of Cacao has (9 grams of fiber), which can help control your blood pressures as well as your blood glucose levels. As the fiber in Cacao as helps with lower blood cholesterol as well with keeping your bowels regular.

5. Magnesium
which plays a very key essential in your body,As it is involved in hundreds of functions in your body such as the following:

* Protein synthesis
* Muscle as well as nerve function
* Blood glucose as well as blood pressure regulation

6. Potassium
This is for sure a crucial part in life, it is the key in heart, kidneys and other organs to function health. Potassium is found in a lot of foods including cacao nibs but the average person is not eating a healthy diet and low potassium is associated with the following:

* Risk of high blood pressure
* Heart disease
* Stroke
* Arthritis
* Cancer
* Digestive orders
* Infertility

7. Improve mood
Cacao help stimulate the brain into releasing neurotransmitters that can trigger feel good hormones. One of those unique neurotransmitters released by cacao is phenylethylamine. Which helps releases endorphins giving us alertness, contentment and a better sense of well-being.

~Note: I have definitely have tried Cacao Nibs (which I call them cacao chips), and they taste Grrrrreat as Tony the tiger would say. So go out and try them I in my opinion will eat those over Chocolate any day.

Fluffy Maple & Brown sugar French Toast



*Substitute

Serves: 4

1 Tbsp. + 1 tsp. All purpose flour * (you can use gluten free flour)
1/3 c. Milk * (Almond,Rice,Soy)
1 Egg * (egg substitute)
1/4 tsp. Pure maple extract
1 tsp. Packed brown sugar
3/8 pinch Himalayan salt
1/8 tsp. Ground cinnamon
4 Thick slices bread

Directions:

1. Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, maple extract and sugar until smooth.

2. Heat a lightly oiled griddle pan over medium heat.

3. Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot with syrup and a dollop of whipped cream.

Corn- cheddar- carrots muffins



(Adapted from: Corn and Zucchini muffins, from: Betty crocker's new choices cookbook © 1993)

* change if dairy/ gluten sensitive

Serves: 12

1/2 c. Cooked whole kernel corn
1 1/4 c. low fat milk* (almond, coconut, rice milk)
2 Tbsp. Vegetable oil
2 egg whites or 1 egg
1 c. All purpose flour * (Gluten- free flour)
3 tsp. Baking powder
1/2 tsp. Himalayan salt
1/2 c. Shredded carrots
1 c. Shredded cheddar cheese* (Vegan cheese)

Directions:

1. Preheat oven to 400. Spray the inside of muffin pan with non stick cooking spray.

2. Beat milk, oil and egg in a medium sized bowl. Stir in the flour, baking powder, salt. Folding in the Carrots, cheese and corn.

3. Dividing the batter up evenly between the muffin pan, and bake until golden brown or until tooth pick comes out clean.

Maple cinnamon breakfast bread



Serves:12

2c. All purpose flour
1 c. Granulated sugar
2 tsp. Baking powder
1/2 tsp. Baking soda
1 1/2 tsp. Ground cinnamon
1 tsp. Himalayan salt
1 c. Buttermilk
1/4 c. Vegetable oil
2 eggs
2 tsp. Vanilla extract
2 Tbsp. Sugar
4 Tbsp. Maple syrup
1 tsp. Ground cinnamon
2 tsp. Butter

Directions:

1. Preheat oven to 350. Grease one 9x 5 in. loaf pan with non stick spray.

2. Add flour,1c. Sugar, baking powder, baking soda,1 1/2 tsp. Cinnamon, salt, buttermilk, oil,eggs, maple syrup and vanilla extract into a large mixing bowl.
Beat for 3 mins. Then pour into prepared loaf pan. Run a spatula over the top to smooth the top down.

3. Blend 2 tsp. Sugar, 1 tsp. Cinnamon and butter, mixing until mixture is crumbly. Sprinkle topping over smoothed batter. Using a butter knife, cut into batter drawing in a swirling motion making a Mable effect.

4. Bake for about 50 minutes, testing with a toothpick. When inserted comes out clean. Place on cooling rack to cool before removing from pan.

Apple potato pancake



Serves: 5
3 potatoes, peeled & shredded
1 gala apple, peeled, cored, shredded
2 eggs
2 Tbsp. All purpose flour
Vegetable oil
1/2 tsp. Cinnamon
Directions:
1. Places shredded potatoes and apples into a clean towel, and wring out the excess liquid.
2. Blend together potato, apple, eggs, flour and cinnamon in a bowl.
3. In a large skillet pan heat oil over medium- high heat.
4. Form mixture into patties; fry until golden brown, for 2 to 4 minutes on each side.
