Apple Pie filled muffins
Start your morning off with a sweet tasting of Apples and Cinnamon. And a cup of Orange juice.
Serves: 12
1 can (21 oz.) Apple Pie Filling
1 c. Coconut Sugar
2 Eggs
1 tsp. Vanilla extract
2 c. All-purpose Flour
1 tsp. Cinnamon
1 tsp. Baking powder
1 tsp. Baking soda
1/2 tsp.Course Himalayan salt
1 c. Craisins
Topping:
1/2 c. Organic brown Sugar
3 Tbsp. Coconut Sugar
1/4 c. Margarine
3 Tbsp. all - purpose flour
1 tsp. Cinnamon
Lemon zest
Directions:
1. Pre heat oven to 350.
2. In a large-sized mixing bowl place apple filling, and mix with electric mixer to separate apple pieces.
3. Add in all the other ingredients and fill muffin tins about 2/3 full.
4. Top with each muffin with crumble topping and bake for 15-20 minutes in 350 oven.

Energy bar

looking for a inexpensive way to make energy bars, this recipe will sing you a very happy tune.
serves: 8 large bars or 16 small- shaped bars
1 c. Roasted peanuts
1 c. Chia seeds
1 c. Figs
1 c. Shredded coconuts
1 c. Cacao nibs
1 c. Sesame seeds
1 c. Orange Zest
Directions:
1. Blend together all ingredients in a blender. Pulse until all ingredients are broken up,
2. Using a spatula, scrape around the edge of the blender and underneath the blade to make sure the mixture does not stick.
3. Continue to pulse for another 1-2 minutes, until all the ingredients mass together and form into a ball.
4. lay parchment paper onto a baking sheet and press mixture down with your hands. wrap and chill in the refrigerator for about 1 hour or over night.

The Guac-a-mole burger

you could not get any better than this. The Guac-a-mole burger is so tasty, it will have you wanting to come back for more.
serves: 6
Guacamole
2 Avocados, halved, peeled, and pitted
1/2 lime, juiced
1 Fresh Chipotle pepper, seeded and minced
1/2 c. Diced tomatoes
1/2 c. Freshly chopped cilantro
1/4 c. minced onions
1 1/2 c. tsp. freshly minced garlic
1/2 tsp. course Himalayan salt (to taste)
1/2 tsp. Freshly cracked pepper (to taste)
Guacamole Directions:
1. In medium-sized bowl mash avocados, with the juice of a half lime, Chipotle pepper, tomatoes, onion, garlic, salt, and pepper. set aside.
Burger
Serves: 6
1 1/2 lb. extra lean ground turkey
3/4 egg, beaten
1/2 c. - 1 Tbsp. Panko bread crumbs
2 Tbsp. 3/4 tsp. evaporated milk
1 Tbsp. - 1 1/2 tsp.Worcestershire sauce
1/8 tsp. Crushed red pepper flakes
1 1/2 tsp. Freshly minced garlic
1 Fresh Chipotle, seeded and chopped
6 slices of cheese (your choice)
Burger Directions:
1. Preheat dutch oven fry pan, or grill on high heat.
2. In a medium-sized bowl, blend together turkey, egg, bread crumbs, milk, Worcestershire sauce, crushed red pepper, garlic, and chipotle pepper. Blend together with your hands, or wooden spoon.
3. Dividing burger mixture into equal portions per serving size, and form each portion into slim burger patties, and set aside.
4. Topping half of the patties with guacamole mixture, and cheese. Then top each patty off with another patty, and pinch to seal, making sure to form a smooth edge.
5. cook for 5- 6 minutes on both sides, or until there is no sight of pink inside the burger. Remove from pan, or grill and add more cheese if desire.

Cheddar- bacon french fries

You will be leaping over four leaf clover, for theses tasty french fries.
Serves: 5
5 lg. Russet potatoes, cut into 1/4 -inch strips
1/4 c. - 1 Tbsp. Olive oil
1/2 c. - 2 Tbsp. Grated cheddar cheese, divided
1/2 c. - 2 Tbsp. Crumbled turkey bacon, cooked
1/4 c. - 1 Tbsp. Freshly chopped Parsley
1/4 c. - 1 Tbsp. Grated cheddar cheese
1/2 tsp. Rosemary
1/2 tsp. crushed red pepper flakes
Directions:
1. Preheat oven to 425.
2. Place potatoes into a mixing bowl and drizzle with olive oil. season with rosemary, crushed red pepper flakes. Toss until evenly coated. Remove potatoes from the bowl and spread onto a non-stick baking sheet in a individual layers. do not discard any Olive oil within side the bowl.
3. Bake in the oven for 30 minutes, flipping potatoes halfway through cooking process. Return the potatoes to the with the olive oil, sprinkle with 1/2 c. cheddar, bacon and parsley, toss until coated well, return back to the oven, and bake until cheese is melted, about 10 minutes. adding more remaining cheese and serve with low sodium sour cream.

I will be bring you different money saving tip's daily on saving cash in your wallet, every Tuesday. This week on money saving tip's Living Better Cafe wants to, help you save more cash in your wallet than ever before. This week I will be giving you a Money saving recipe, yes! making delicious meals within side the comfort of your home, or wherever you maybe can also save "YOU" Money!
Yes, once again I am bring you a inexpensive recipe that, I know for sure will keep you and you're wallet happy. This recipe you all have seen displayed here at "Living Better Cafe", and some have seen it displayed at "Coffee Talk". While I just could not hold it back any longer so, here goes the recipe. But, before I present the recipe to you all. I just want to share with you that it, really all depends on where you shop for all the ingredients.
Serves: 12
1 c. skinless, boneless chicken breast, shredded
1 tsp. Paprika
1 c. Chopped celery
2 Scallions, chopped
1 c. Peanuts, chopped
1 c. shredded cabbage
1 tsp. Course Himalayan Salt
1/2 - 2/3 c. hot sauce
4 oz. crumbled blue cheese
12 egg roll wrapper, or spring roll wrappers
Freshly ground pepper (to taste)
Directions:
1. preheat oven to 400. place silicone baking mat onto baking sheet, or line with parchment paper.
2. In a medium sized bowl, blend together chicken with 1/2 c. hot sauce, adding in 2/3 if chicken has soak up most of the sauce. Add in paprika and salt. Blend in celery, onion, and peanuts. and mix until completely incorporated . Season with black pepper to taste.
3. Place egg roll wrapper onto a clean work space, with one corner facing your direction and spread just about 1 Tbsp. of cabbage evenly across the wrapper. using a spoon, or a small ice cream scoop. Add about 2 Tbsp. of chicken mixture then 1 Tbsp. cheese.
4. Assembly to making egg roll, pulling the corner closets to you up towards the center of the mixture and wrap it under the mixture. Fold in the right and left corners, sealing the ends with a dab of water. Rolling the egg roll away from your directions, Then gently nestling the egg roll into itself to keep its form. Repeat this process until all wrappers are filled.
5. Lightly spray the top of the egg roll wrappers with non- stick cooking spray and bake for about 12 to 17 minutes, making sure to flip egg rolls over halfway through, or until golden brown. Serve with sweet and sour sauce, or Ranch dressing.

Welcome to Hot Out Of The Oven food news, I have yet another edition of food news coming straight from no other source but, Living Better Cafe of course. As you have read through many editions of (H.O.T.O), since I have started this food news addition. You have became more wiser about what you buy,and place into your mouth. While I am very happy to continue to keep "Hot of the oven" going as much as you keep enjoy reading it every Monday. In this second March edition I will be spilling out the facts of Cinnamon, and is it really good for your health.
When it comes to baking delicious desserts "Cinnamon" is, our most # 1 spice everyone grabs. But, did you? Cinnamon has a long history both as a spice and as a medicine. It is the brown bark of a cinnamon tree, Which you can find it in stick form, or as a ground powder form. There are two varieties of cinnamon, Chinese and Ceylon, they both have similar flavors, however cinnamon from Ceylon is slightly sweeter, much more refine and difficult to find in your local grocery store.
Health Benefits:
Cinnamon has unique healing properties, which come from three basic types of components in the essential oils found in its bark, of the cinnamon tree. These oils contain active components called cinnamaldehyde, cinnamyl acetate, and cinnamyl alcohol, plus a wide range of other volatile substances.
Anti- clotting
Cinnamaldehyde (also know as cinnamyl acetate) has been well- looked into for its effects on blood platelets. Platelets are constituents of blood that are designed to clump together under emergency circumstances (like physical injury) as a way to stop bleeding, but under normal circumstances, they can make blood flow inadequate if they clump together too much. Cinnaldehyde in cinnamon helps prevent unwanted clumping of blood platelets. Cinnamon has the abilities to lower the release of arachidonic acid from cell membranes also puts it in the category of an "anti-inflammatory" food that can be helpful in diminishing inflammation.
Anti- Microbiol Activity
The essential oils found in cinnamon also qualify it as an "anti-microbial" food, and cinnamon has been studied for its ability to help stop the growth of bacteria as well as fungi, including the commonly problematic yeast Candida (Remember watching Episode 8, the benefits of Cinnamon).
Controlling blood sugar
Adding cinnamon to high carb foods can help diminish the impact on your blood sugar. Did you know also? that Cinnamon slows the rate at which the stomach empties after meals, reducing the rise in blood sugar after your done eating. Cinnamon is also significant to help people with type 2 diabetes improve their ability to respond to insulin, thus normalizing their blood sugar levels.

Not only does digesting cinnamon improve the body's ability to utilize blood sugar, but just smelling cinnamon sweet spice boosts your brain activity.

Cinnamon is loaded with an excellent source of fiber and the trace mineral manganese while also a very good source of calcium. The combination of calcium and fiber in cinnamon is important and can be helpful for the prevention of several different conditions. When
both calcium, fiber can bind to bile salts and help remove them from the body. By removing bile, fiber helps to prevent the damage that certain bile salts can cause to colon cells, thereby reducing the risk of colon cancer. In conclusion, when bile is removed by fiber, the body must break down cholesterol in order to make new bile. This process can help to lower high cholesterol levels, which can be helpful in preventing atherosclerosis and heart disease. For sufferers of irritable bowel syndrome, the fiber in cinnamon may also provide relief from constipation or diarrhea.

Coconut-Pineapple upside pancakes

When it comes to having breakfast, I am a "Huge" fan of Pancakes. So when I was thinking about pancakes, I was thinking about coconut pound cake , and pineapple upside down cake.
Serves: 14-16
2 c. Pancake Mix
2 c. shredded coconut
1 1/3 c. water
1/4 c. coconut sugar
1 can (20 oz.) pineapple slices, cut into fourths
Directions:
1. preheat a fry pan, or griddle pan to 375.
2. Blend together pancake mix and coconut, water with a wire whisk. Batter will still have slight lumps. Pour in about 1/4 c. pancake mixture onto the pan. Sprinkle about a Tbsp. coconut sugar on top of the mixture once its on the pan. placing about three pineapple slices over top of the coconut sugar.
3. Allow to cook for about 1 to 1 1/2 minutes, or until ready to flip. Cook the other side for the same amount of minutes.
