Millet Loaf

Living Better Cafe says: This is right up Vegan alley, and its loaded with lots of vitamin's and minerals your body will need. So, move over Lentil's and please hold the meat on this one because this is a Vegan and Vegetarian Loaf. Why, you do not have to become a Vegan, nor Vegetarian to enjoy this dish.

Serves: 5

3⁄4 c. millet
1 7⁄8 c. water
1⁄4 tsp. salt (or to taste)
3⁄4 c. carrots, finely diced
1⁄2 c. celery, finely diced
1⁄2 c. onion, finely diced
1⁄2 clove garlic, minced
1⁄2 Tbsp. sesame oil
3⁄4 tsp. dill weed
1⁄2 tsp. dried thyme
1⁄2 c. Poppy seeds
1 1⁄2 Tbsp. all-purpose flour

Directions:

1. Rinse and strain the excess water from the millet, and put it in a medium-size saucepan with the water and 1/2 tsp salt. Cook, placing the lid slightly on the pan, over medium heat for about 20 minutes, or until soft; the millet should absorb all the water in the pan.

2. Saute the vegetables in sesame oil until onions are translucent. Adding in the seasonings.

3. combine together the cooked millet and the veggies together, with the poppy seeds.

4. Adding in 3 tbsp flour to the millet mixture, and blend until completely incorporated.
5. lightly grease and flour the loaf pan. Pressing the mixture into the pan, and bake at 400 F for one hour (45 minutes if the millet is still warm when you put it into the pan).

6. Once the loaf is complete, allow to cool for about 10 minutes before serving.

Strawberry Dump Cake

Living Better Cafe wants to, welcome you to Dessert on a dime were every Friday throughout this Fall season. And Living Better Cafe know's your taste bud's will be singing a fair festival tone. So, Katrina hope's you enjoy this recipe down below.

Serves: 2

1/2 c. strawberry pie filling
1/2 c. dry chocolate cake mix (I recommend Devil food cake mix)
2 Tbsp. margarine, sliced into thin squares
Chocolate Syrup
Crushed peanuts

Direction:

1. Pre heat over to 350.

2. spray two small oven size bowls, with non-stick cooking spray.

3. Placing 1/4 c of the strawberry filling in each bowl. Sprinkle 1/4 c cake mix over top of the mixture, and divide the margarine over top of the mixture in each bowl, making sure you have covered the mixture completely.

4. Place bowl in the oven on a baking sheet, and bake for 30-35 minutes

Living Better Cafe is coming to you with a healthy tip, that will help you of course save money on buying more avocados. Now in order for you to have avocados, you need to have an avocado seed. So, here is where the tip comes in. But, before Living Better Cafe just jumps straight in, lets give you a little history on this healthy fruit.
Avocados are the native fruit to the Northern parts of Mexico, and South central America. All the way into the western south america. And into the south of Andean Peru. Avocados varies in size, and have darker completion skin, and contain a larger seed. Which you can later plant. Now here is where Living Better Cafe will give you some tip's on how to create your own plant. So, I Katrina Smith the creator of Living Better Cafe, hope you have your avocado seed in your hand, and ready to go because there's nothing more enjoyable, than growing your own avocados, You know the feel of know what you're putting in your body, came straight from your own garden, and you do not have to worry about the chemicals.
Why now it's time to give you the tips on how to start, your own avocado plant.

1. Remove and clean the seed: You'll need to start by removing the pit from the avocado carefully (making sure you do not cut into it), and then wash it with soap and water. ( while the seed is still wet remove the outer darker skin, by peeling it off.)

2. Figuring the top from the bottom: like when Living Better Cafe explained in the history that, some avocados varies in size. So, that will also sometime make figuring where the top and bottom is located. So, when it comes to finding the top from the bottom, The top is pointer, and the bottom is flat. Once you have gotten that all figured out, it's time to find tooth picks, or in the picture, Katrina had use paper clips, which will work fine to.

3. Push three or four tooth picks in the widest part of, the avocado so it can have some room to suspend the pit over a glass of water with the pointy side sticking up. The water should cover about an inch of the seed.

4. Temperature: Place the glass in a warm place, and make sure the water stays leveled.

5. Surprise: Within 2-6 weeks you will begin to see roots and stems, coming from the seeds. when the stem reaches six inches long, you will need to trim it in half.

6. It's a....? : When the stem starts to grow leaves, its time to transport the seed in to a pot with loose, and gritty soil. You will need to plant the seedling root down, leaving the top half of the seed sticking out of the soil.

7. Attention, Attention: You will need to give your plant, plenty of water and keep in a very sunny spot, to help it to grow.

8. Assist, Assist: Every time the stem grows another six inches, you will need to pinch back the newest leaves. So, you can encourage for more leaves to grow and your avocado to become a fuller plant.

Climate: When it comes to temperature, you are going to want to pay close attention to because In most regions, avocado plants adore summer like temperatures. So, it will need to stay in a warm climate that does not witness temperatures less than 45 degrees.

Transplanting: When it comes time to transplant your plant it, best to do that in the early spring, after it slowly becomes accustomed to its environment by taking it outside, for a week or two.

You are going to want to plant it in a large hole, about 3 feet wide by three feet deep) in a well drain soil, in a place that has direct sunlight.

You will need to water, your plant regularly. But, do not over water. How do you know your over watering your plant? The leaves on your plant will become discolored, a yellowish color to them.

Hey where my avocado? Yes your plant will grow its own fruit. But, that will take some years for that to happen. But, how many years will, I have to wait for it to happen? Why Living Better Cafe says: You will need to wait about five to thirteen years for your plant to grow its own avocados.

Granola

Serves: 5

1 1/3 c. rolled oats - old-fashioned or quick-cooking
1/4 c. wheat germ
1/3 c. raisins
1/2 tsp. ground cinnamon
1/2 tsp. vanilla extract
2 Tbsp. and 2 tsp. sunflower seeds
2 Tbsp. honey
2 Tbsp. maple syrup
1/4 tsp. salt
1 Tbsp. and 1 tsp.brown sugar
2 Tbsp. and 2 tsp. vegetable oil
2 Tbsp. and 2 tsp. finely chopped almonds
2 tablespoons and 2 teaspoons Chia Seeds

Direction:

1. Preheat oven to 325. Lining a baking sheet with foil, or parchment paper.

2. In a medium size mixing bowl, combine together the Oats, Sunflower seeds and Chia seeds and Almonds. Stir together the brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Let mixture come to a boil over medium heat, then pour the dry mixture, and stir until coated completely. Spread the mixture out evenly on the baking sheet.

3. Bake in the oven until crispy and toasted, for about 20 minutes. Stirring once half way through the process. Allow to cool and add in the raisins.

Vegan Pizza

Living Better Cafe says: Tomato sauce move on over because there is another vegetable taking over this pizza.

2 Tortilla wraps
1 15 oz. hummus
1 c. button mushrooms, Chopped
1/3 c. red onions,Chopped
1/3 c. bell pepper, sliced
1/2 tsp. fresh basil
1/2 tsp. fresh oregano
1/2 tsp. garlic powder
1/2 c. vegan cheese
Crushed red pepper flakes

Direction:

1. Heat oven to 400. Spread the hummus and place the cheese on the tortilla wraps, and add the rest of the ingredients.

2. Allow to bake for ten minutes, or until the cheese begins to melt.
