Eggplant Black Bean Burger

Serve: 8
2 c. black beans (boiled, drained, mashed)
2 c. eggplant (grated, squeezed)
1 c. grated carrots
1 c. Mushrooms (chopped)
1 Jalapeno pepper (chopped)
1/4 c. chickpea flour
2 Tbsp. Sriracha sauce
1 tsp. cumin powder
1 tsp. garlic (minced)
1 tsp. Himalayan salt
Directions:
1. Blend together mixture in a glass mixing bowl and mix well until combined well with hands or wooden spoon.
2. Divide mix into equal parts.
3. Heat dutch oven skillet with non stick cooking spray (don't spray cooking spray on skillet as it's on the heat).
4. Remove one portion of the mixture placing in between palms and form a ball gently. carefully pressing down with spatula in the middle of the ball to form patties.
5. Place onto Skillet and allow to cook on both side for a few minutes, until the patties turn brown.
