Pumpkin Salmon salad



A great perfect fall salad with an awesome taste, that you can add along side any main course.

Serves: 7

1/2 c. plus 2 Tbsp. plus 1 tsp. raisins
7 granny smith apples, peeled and shredded
3 1/2 c. Shredded pumpkin
7/8 (14.75 oz.) can Salmon, drained
3 1/2 scallions, chopped
1/4 c. plus 3 Tbsp. low fat plain yogurt
Course Himalayan salt & ground pepper (to taste)
Sesame seeds (to garnish)- optional

Directions:

1. Combine apples, raisins, scallions, pumpkin, salmon, yogurt, salt and pepper in a large bowl and mix well. Chill before serving.
