Apple potato pancake

Serves: 6

4 lg. potatoes
1 1/2 c. Granny smith apple, shredded
1 Onion,chopped
1 egg, beaten
1 tsp. Course Himalayan salt
2 Tbsp. all- purpose flour
Cayenne Pepper (to taste)
2 c. vegetable oil
Cinnamon sugar (Optional)

Directions:

1. Finely grate potatoes, apple and onion into a large bowl. Drain off any excess liquid from both onion, and apple.

2. Blend in egg, salt, and Cayenne pepper. Adding in enough flour to make mixture thick, about 2 to 4 Tbsp. all together.

3. Preheat oven to 200.

4. Heat oil in the bottom of a 1/4 inch heavy dutch oven skillet over medium high heat. Dropping 2 or 3 1/4 c. mixture into hot Skillet, and flatten to make 1/2 inch thick pancakes. Fry, turning once, until pancake is golden brown. Transfer to a paper towel lined plates to drain, and keep warm in a low oven until time to serve. Serve with Cinnamon sugar - Optional.
